Creamy coconut, salted cashews, and a smooth buttery caramel combine to make a tasty and delicious smoothie! Plus a fun surprise.
Okay, I know I said I have a surprise for you guys at the end of this post, but don’t be a spoil sport and skip ahead. Okay? mmmm kay.
Because it would be a real shame to skip this awesome smoothie in order to get to the surprise.
You guys, I call this a smoothie because, well…smoothie sounds healthier than milkshake, and technically there is not dairy milk in this, nor ice cream, so it is definitely a smoothie! Go with me on this one… you will be glad you did.
This “smoothie” has a coconut milk base, which means my husband did not like it. But if you like coconut, you should enjoy this! It has sweetened shredded coconut too, which means you need a high power blender, like a Blendtec, otherwise it might be texturally frustrating. Is that a phrase I can use? I just mean if you don’t like texture in your smoothie, blend well!
This smoothie also has cashews. My favorite nut. And caramel. I love caramel so much that I figured it was time to put it in a smoothie. I also added tofu. I know I am crazy. But you guys, it is such an awesome way to add protein and get a creaminess without adding dairy! But feel free to skip it and use vanilla greek yogurt or something else to achieve the same creaminess if you want.
Caramel, coconut, and cashews just go together so well. Like so well. Like they should write poems and sonnets about the delectable deliciousness of this combo. Mmmmm. So stick them all in a blender, and you get a dessert smoothie!
A rich, delicious, nutty, smoothie. I had to make a few versions, trying to get it right. The first one had way too much coconut, and not nearly enough caramel. But I think I got the proportions right, but please feel free to adjust to your preference.
So let’s get to this recipe so you can get to the surprise!
Caramel, Coconut, Cashew Smoothie
Ingredients
- 2 1/2 cups ice cubes
- 1 can unsweetened coconut milk
- 3-4 Tbs caramel sauce
- 1/2 cup sweetened coconut
- 3/4 cup roasted salted cashews
- 6 ounces firm tofu
Instructions
- Put all ingredients in your blender, and blend until smooth.

Ummmm! So good made with a scoop of French Vanilla Complete and a cup of almond milk in place of the coconut milk and tofu…………What a tasty treat!

Hi this looks delicious and I can’t wait to make it. My question is how much Almond milk do I use in place of the tofu?

I am not sure, as I have never made it that way, but I would say just eye-ball it. Start with a half cup, and add more if it is too thin.
