Cheesy Turkey Zucchini Casserole: The perfect leftover turkey casserole for a school night when you have more pressing things to focus on. A simple and delicious turkey recipe that incorporates zucchini into something even the little kids will eat. Make it in no time and enjoy!

This easy Cheesy Turkey Zucchini Casserole is one of my favorite turkey leftover recipes. Perfect for a family dinner or an after school snack. You can leave it in the fridge so your kids can warm it up anytime. It also makes a great chicken casserole.

Back to school dinner saver

We are back in school, and back to our busy schedules with piano, sports, and then that pesky thing we call homework. This means evenings are hectic, and dinners have to be easy. That is why I absolutely love this dinner.

I cooked a turkey last week for another post, and had some leftovers, so I was trying to come up with a really yummy way to use them for a weeknight meal. This casserole was the answer! But don’t worry, you do not have to cook a turkey. You can use chicken. I love using rotisserie chicken in this recipe as well. And since you can pick up rotisserie chicken for super inexpensive, and it is already cooked, it is a great substitution for the turkey in this casserole recipe.

This particular casserole was a real dinner saver after a crazy back to school week.

Cell phones for your kids

Let’s talk about back to school, shall we? Is it going good for you guys? Do you like your kid’s teachers? Do your kids like school?

I already shared in another post how I totally did not realize the first day of school was early out, and therefore did not show up to pick my kids up. I mean, seriously, the worst! I felt so bad.

And you guys! They forgot their phone at home that day, so they had to call me from the office. And I missed the call. It was a mess. But it also made me super grateful that my kids have a phone, and that Walmart Family Mobile makes it so affordable for them to have great 4G LTE service.

You can bet they haven’t gone to school without their phone since. The service is just $29.88/month (for the first line) Unlimited Talk, Text & Data service plan which includes up to 1G of 4G LTE data. And the phones are a great price too. They start at under $20 for the ZTE Zinger, and often have phones on rollback, like right now the LG Leon LTE is $79.82 *(Rollback from $99.82). I love that since my kids aren’t exactly careful with their phones.

Affordable phones and phone plans are awesome, now I just have to figure out a way to get my kids to remember to keep their phones charged, and take them with them when they leave the house.

Anyway, having an affordable and low cost phone for my kids makes my life easier, but so does having an arsenal of easy dinner recipes. So let’s get to this one.

Toast your stuffing and prepare your filling

Melt your butter and mix it with your stuffing. Then cut up your turkey or chicken and some onion and zucchini. Make the pieces small enough that they mix well, but big enough that the flavors don’t all blend together. These ingredients make for great zucchini recipes.

Prepare your sauce and mix with cheese

Then mix up your sauce, and combine the cheese, zucchini mix, and half a box of stuffing. Make sure everything is well mixed and thoroughly coated with sauce and cheese.

Put in the pan and top

Put it in a greased 9×13 pan, and top with the other half of the stuffing. The stuffing on top gives this casserole the perfect amount of additional breadiness for a delicious, full flavor in chicken casserole recipes.

Bake

Easy enough, just put it in the oven and pull it out later to enjoy! simple as that you have one of my favorite turkey recipes ever.

Ingredients

  • 6 ounce box of stuffing mix Stove Top, Turkey
  • 1/2 cup melted butter
  • 4 medium zucchini chopped into cubes
  • 3 cups cooked and cubed turkey breast or use Chicken or Rotisserie Chicken
  • 10.75 ounce Cream of Mushroom Soup
  • 3/4 cup onion chopped
  • 1/2 cup heavy whipping cream
  • 1/2 tsp pepper
  • 1 cup shredded cheddar cheese mix

Instructions

  • Preheat oven to 350 degrees F
  • In a large bowl combine the stuffing and melted butter, and stir.
  • Mix Cream of Mushroom soup, cheese, heavy whipping cream, and pepper together to make a sauce mixture
  • Cube turkey/chicken and put in the bowl with the sauce mixture
  • Add in the zucchini and pepper
  • Add in half of the stuffing mixture, reserve the other half for the top.
  • Stir well until ingredients are combined
  • Pour into a greased 9 x 13 pan, and top with the other half of the stuffing.
  • Bake, uncovered for 40-50 minutes until bubbly and golden brown.

    This meal looks like a fabulous weeknight meal -- perfect for leftover turkey or chicken. The zucchini, the cheese, and the stuffing -- this sounds just delicious!

    I had this happen once before too! We came back from a vacation and I had no idea that school was an early release! It made me feel so bad! This casserole is perfect for this time of year!
