A simple and delicious turkey recipe that incorporates zucchini into something even the little kids will eat. Make it in no time and enjoy!
This easy Cheesy Turkey Zucchini Casserole is one of my favorite turkey leftover recipes. Perfect for a family dinner or an after school snack. You can leave it in the fridge so your kids can warm it up anytime. It also makes a great chicken casserole.
Dinner Saver
We are back in school, and back to our busy schedules with piano, sports, and then that pesky thing we call homework. This means evenings are hectic, and dinners have to be easy. That is why I absolutely love this dinner.
If you have leftover turkey from Thanksgiving, this is a really yummy way to use it for a weeknight meal. This casserole can be made ahead and frozen too! But don’t worry, you do not have to cook a turkey. If you don’t have leftovers, you can use chicken. I love using rotisserie chicken in this recipe as well. And since you can pick up rotisserie chicken for super inexpensive, and it is already cooked, it is a great substitution for the turkey in this casserole recipe.
This particular casserole was a real dinner saver after the craziness of holidays.

Toast your stuffing and prepare your filling
Melt your butter and mix it with your stuffing. Then cut up your turkey or chicken and some onion and zucchini. Make the pieces small enough that they mix well, but big enough that the flavors don’t all blend together. These ingredients make for great zucchini recipes.
Prepare your sauce and mix with cheese
Then mix up your sauce, and combine the cheese, zucchini mix, and half a box of stuffing. Make sure everything is well mixed and thoroughly coated with sauce and cheese.
Put in the pan and top
Put it in a greased 9×13 pan, and top with the other half of the stuffing. The stuffing on top gives this casserole the perfect amount of additional breadiness for a delicious, full flavor in chicken casserole recipes.
Bake
Easy enough, just put it in the oven and pull it out later to enjoy! simple as that you have one of my favorite turkey recipes ever.

Cheesy Turkey Zucchini Casserole
Ingredients
- 6 ounce box of stuffing mix Stove Top, Turkey
- 1/2 cup melted butter
- 4 medium zucchini chopped into cubes
- 3 cups cooked and cubed turkey breast or use Chicken or Rotisserie Chicken
- 10.75 ounce Cream of Mushroom Soup
- 3/4 cup onion chopped
- 1/2 cup heavy whipping cream
- 1/2 tsp pepper
- 1 cup shredded cheddar cheese mix
Instructions
- Preheat oven to 350 degrees F
- In a large bowl combine the stuffing and melted butter, and stir.
- Mix Cream of Mushroom soup, cheese, heavy whipping cream, and pepper together to make a sauce mixture
- Cube turkey/chicken and put in the bowl with the sauce mixture
- Add in the zucchini and pepper
- Add in half of the stuffing mixture, reserve the other half for the top.
- Stir well until ingredients are combined
- Pour into a greased 9 x 13 pan, and top with the other half of the stuffing.
- Bake, uncovered for 40-50 minutes until bubbly and golden brown.
