Do you guys remember the coconut mango chia seed pudding I posted a little while back? It was so good it got me thinking, and I had to experiment with other flavor combinations. My husband LOVES coconut cream pie, so this was a natural option.
I am not a huge breakfast food eater, so I loved having an option that tastes like dessert, but is actually healthy, and that I could make in advance so that in the morning hustle and bustle I am not trying to come up with something for me to eat while my kids have pancakes or cereal.
But it does not have to be eaten plain, I stirred in some vanilla greek yogurt, fresh berries, and granola, and had it for breakfast several days in a row, mixing in different stuff each day so I wouldn’t get bored. Then I ate it plain as dessert. Honestly, it is just yummy. Make some, keep some in your fridge, and eat it! It has great health benefits and tastes amazing.

Does this call for canned coconut milk or something like Silk coconut milk?
Rachael says
Either one works. I used the boxed kind!
Diane Lynch says

It makes 4, 1/2 cup servings.
Chelsea says
Did you mean 1 Tsp of vanilla not 1 Tbsp of vanilla? I made this and the vanilla taste was very strong. I had to mix with a lot of yogurt and other toppings to help mask the vanilla flavor. I would definitely make this again – the recipe was easy and overall yummy- but next time I’ll use much less vanilla!
Rachael says
Chelsea, It is possible I had an older vanilla wasn’t as potent. I will retry the recipe and adjust as necessary. Thanks for the heads up!
Michelle says
Vanilla what? lol, sorry, maybe I should know this but vanilla extract, vanilla bean, vanilla yogurt??? It looks AMAZING!!!!
Rachael says
Vanilla extract! Thanks for asking.

Hi, it looks great! Can I use coconut cream? don’t have coconut milk…
Rachael says
Sure, this will also help it be a little sweeter, so it will taste even more like dessert! Yum!
Laura says
Do you add the 1/2 cup of coconut to the mixture it do you use it as garnish? Thanks!
Rachael says
Both! Thanks for asking. I will have to adjust that recipe description.

This smells so good, but the texture is horrible. It did not have ANYTHING like a pudding-consistency and basically turned into moist, flubbery, chunky crumbles. I am going to have to find something to thin this down if it’s going to be a better consistency in order to eat it.
Rachael says
Oh no! That makes me so sad, I make chia puddings regularly, and have never had that problem. Did you use the canned or boxed coconut milk? Did you add yogurt?
Marianna says
Hi, I was wondering what the sugar count is in this receipe? I have to watch my sugar intack closely!

Of course I had all these ingredients (*jumps for joy*)…and I just made this tonight! I licked the honey spoon clean (after I mixed the ingredients) and it was a wonderful flavor with the coconut milk! Yum! I can’t wait to try this for my breakfast! I have a peach I may add to it and some vanilla Greek yogurt.
I used canned coconut milk, raw honey and real vanilla extract (1 tsp as it is very strong). I will let you know how it turns out.
Thanks for sharing this recipe! You are very creative!! I found you via Pinterest.
Rachael says
That sounds awesome. I love mixing vanilla greek yogurt in, and the peaches sound amazing!

Can I use unsweetened coconut flakes and adjust the amount of honey? We don’t have sweetened coconut flakes in stores here in Croatia.
Rachael says
Yes, you can! The beauty of this recipe is how much you can adapt and adjust it to your preference. I add whatever fruit I have on hand!

Use it within 4-5 days, possibly up to a week, but it has never lasted that long at my house because I always eat it too fast.
