  • 2 pounds chicken breast, cut into bite-sized pieces
  • 1 package Knorr Cheddar Broccoli Rice Side
  • 10 ounces frozen chopped broccoli
  • 2 cups chicken stock
  • 1 cup sharp cheddar cheese, shredded
  • Seasonings of choice (salt, pepper, garlic powder, onion powder, paprika, etc.)

How to Make Chicken Broccoli Rice Casserole

  1. Preheat the oven to 350°F.
  2. Combine ingredients. In a 2-quart (or larger) casserole dish, mix together the Knorr rice side, frozen broccoli, chicken chunks, seasonings, and chicken stock.
  3. Top with cheese. Sprinkle the shredded cheddar evenly over the top and cover the dish with foil.
  4. Bake. Place in the oven and bake for 45 minutes.
  5. Uncover and finish baking. Remove the foil and continue baking for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F and the rice is tender.
  6. Serve hot. Let it rest for a few minutes, then serve warm and enjoy that creamy, cheesy goodness.
