What you Need for Chicken Gnocchi Bake

  • 4–6 boneless, skinless chicken thighs
  • 2 cups cherry or grape tomatoes
  • 1 (16 oz) package gnocchi (shelf-stable or refrigerated)
  • 1 cup mozzarella pearls
  • 1/2-1 cup Italian dressing

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Assemble the bake: Place chicken thighs in the baking dish. Scatter gnocchi and cherry tomatoes around the chicken.
  3. Add the flavor: Pour Italian dressing evenly over everything and toss gently to coat.
  4. Bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the gnocchi is tender.
  5. Add cheese: Sprinkle mozzarella pearls over the top and bake for another 5 minutes, until melty and gooey.
  6. Serve hot, spooning tomatoes and sauce over each piece of chicken. 
  7. Garnish with fresh basil.
