Ever feel like you’re living inside a Salvador Dalí painting?

Seriously, I’m expecting my keyboard to start melting over the side of my desk onto the floor any second now.

In other words, it’s hot. Really stinkin’ hot. So much so that the only thing I really want to put in my mouth (or anywhere near any part of my body) is something that’s going to help cool me down.

Enter these Jasmine Tea and Coconut Popsicles.

These pops are almost as creamy as real ice cream but are dairy free, refined sugar free and can be made vegan by using maple syrup in place of the raw honey. All it takes is three ingredients and a few hours of hands-off freezing time and you’re good to go.

Due to this heat, popsicles are pretty much the only thing coming out of my kitchen on a regular basis these days. And, I must admit to skewing the recipes toward my own personal taste preferences. My children are dying for me to make something wildly sweet and chocolatey but…I don’t really feel like it.

My children, however, were not impressed.

But, I’m sorry, if I’m going to break a sweat just standing at the kitchen counter pouring liquid into a popsicle mold you can be certain it’s going to be a liquid I’ll enjoy in its frozen form! I found these awesome re-useable popsicle molds that are easy to remove, BPA free, and dishwasher friendly.. How convenient.

I guess heat makes this mama selfish.

But here are two truths I feel compelled to share before you call child welfare on me. 1) My kids are in no way, shape or form deprived of sugary treats and 2) They are 8 and 14 and completely capable of making their own popsicles.

Ingredients

  • 1/3 cup boiling water
  • 7 jasmine tea bags
  • 1 can full fat unsweetened coconut milk
  • 1 Tablespoon raw honey

Instructions

  • Combine water and tea bags.
  • Let steep ten minutes.
  • Add all other ingredients and whisk vigorously for about 30 seconds.
  • Pour into popsicle molds.
  • Freeze about 6 hours.

Notes

When filling popsicle molds, I leave about 1/4 inch at the top before I put the lid on. The liquid is thin so the stick sinks all the way down into the pop. Therefore I like to leave a little extra room for more comfortable holding.
