Breakfast burritos are great for busy mornings because you can make them ahead of time. They’re totally versatile, just include any of your favorite ingredients. I love they are easy, quick and leave you feeling good (not weight down), so you can get on with a productive morning.
These breakfast burritos are the perfect way to start a busy day. And while I’m sharing 3 different breakfast burrito ingredient combinations, feel free to mix things up and customize to your preference. We are no strangers to hectic mornings. Several years ago we decided to commit to having our kids be in a French Immersion program. We later moved, which means, now in order to keep them in the program, we have a 30 minute + drive every morning to get them to school. And because I have kids that vary in ages, we drive to 3 different schools each day.
We get up early, and to say our mornings are hectic, is a bit of an understatement. Knowing I am committed to busy mornings is one part of why I have dedicated a lot of my time to trying to make life easier, especially meal times. And one of the ways I do that in the mornings is by creating make-ahead breakfasts, like these freezer breakfast burritos, on days I have more time, so the busy mornings go smoother.
The goal is to not just feed my kids, but to give them something wholesome and that is a good source of plant-based protein, and that will keep their tummies satisfied until lunch. We have tried other simple breakfast solutions, but there always seems to be a drawback…too much sugar, not enough staying power, or no protein to speak of. These freezer friendly breakfast burritos check all the right boxes, and my family loves them.
Mostly they love them because they taste great. And I love them because I know they are great!
What is in Freezer Breakfast Burritos?
Because everyone in my family likes their burritos a different way, we have started making 3 different varieties to freeze. But there is no set recipe, make them how you want, this is just how we like them:
- Classic Breakfast Burritos
- Cowboy Breakfast Burritos
- Veggie Breakfast Burritos
I like to keep things systematic and practical, so we use the Classic Breakfast Burrito, as the base and then add other ingredients to it to customize for variety and preference. This makes assembly quick and easy.
These freezer burritos are the perfect solution for us. So let’s take a look at what is in them:
MorningStar Farms® Original Sausage Patties:
The protein source for all 3 of these breakfast burritos is MorningStar Farms® breakfast foods. I choose MorningStar Farms because each servings has 9 grams of plant-based protein, which is the perfect way to start the day.
And, these sausage patties are extremely convenient. I just cook them according to the package directions. Then I chop them up, and use them as the filling in the burrito.
Tater Tots:
Tater tots are such a fun addition to breakfast burritos. You can add them in already frozen, or if you want a little extra texture and crispiness to them, air fry or bake them before adding them to your burritos.
You could also use cooked hash browns or cubed potatoes. But in the name of efficiency, tater tots are my preferred addition.
Scrambled Eggs:
The next ingredients in these warm and satisfying breakfast burritos that don’t weigh my family down or negatively impact energy levels is eggs.
Eggs are an iconic breakfast food, and a perfect pairing with the MorningStar Farms® breakfast foods line. They are also an excellent source of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.
In other words, scrambling a few eggs with a little salt and pepper not only help make this a satisfying breakfast that can keep you full until lunch, but a wholesome one as well.
Before I put these eggs into the burrito, I quickly scramble and cook them in a skillet. I usually add a little salt and pepper to enhance the flavor.
Black Beans:
I am a big fan of adding black beans to my breakfast burritos. Not only do they add some great fiber, and help make and keep these burritos filling, they add flavor and texture.
Because you bake the burritos after assembling them, you do not have to heat the beans up before you put them in your burrito wrap. But you do want to rinse them.
Green Peppers and Onions:
While I like to put a lot of the ingredients into my burritos fresh, I prefer green peppers cooked. Same with onions. So, I chop them up finely, and saute them with a little olive oil to make them tender, sweeter, and totally flavorful. They are the perfect addition.
I also like red peppers in my burritos, but I leave them raw, as red peppers are naturally sweeter, and I like the variety of texture. Of course, feel free to add them to the green pepper and onion mixture if you prefer them cooked.
Cheese:
Whenever I make a breakfast burrito I added shredded cheese. I like to use a colby jack or mixed cheese. But you can add add whatever kind you like best. The cheese acts as a great binder for the burritos and helps to hold the filling all together after baking it.
Plus, cheese is delicious. Feel free to be generous with it.
Other Additions:
The beauty of these breakfast burritos is while I am providing you with three recipes for the combos we love, you really can customize and adjust to your preference. Here are a few fun additions:
- Corn
- Tomatoes
- Sun-dried tomatoes
- Chives
- Extra cheese, or different kinds of cheese.
- Root veggies (roasted is best)
- Artichoke hearts
- Avocado
And, you can add to the burritos after they are cooked as well. I always love to serve mine with sour cream, salsa, avocado, and fresh cilantro. But because these are often a grab and go, eat in the car on the way to school, kind of breakfast, I like to make sure the flavors stand on their own without the added toppings.
Making Breakfast Burritos:
These make ahead/freezer-friendly breakfast burritos using MorningStar Farms® are a weekend-worthy breakfast that helps you take on every day, even busy weekdays. And the easy preparation, and ability to make them ahead, gets you on your way quickly so you can do more and win your morning.
I love to set up an assembly line style with the foil and the tortillas, and all the fillings, and just make a whole bunch in one go. Then label the bags and freeze them for individual use later.
My kids will grab the flavor they want in the morning and pop it in the oven, my husband will pack them for work trips and heat them in the microwave, and they are even great heated in an air fryer or toaster oven.
When we want to eat them in the mornings, we pull them out and pop them straight into the oven from frozen, baking them for 25-30 minutes.
The mess and prep is already taken care of, so you just need to give them time to bake. This is totally hands off time where we can be getting ready, doing hair, packing lunches, and signing homework folders. But everyone still gets a hot, delicious, breakfast. And one that stays with them all day so they can focus in class and win their morning.

Freezer Breakfast Burritos
Ingredients
- 12 MorningStar Farms® Original Sausage Patties
- 72 tater tots
Scrambled Eggs
- 10 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbs milk
Pepper Mix
- 1/2 cup green pepper chopped
- 1/2 cup large yellow onion chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 Tbs olive oil
Classic Breakfast Burrito
- 4 MorningStar Farms® Original Sausage Patties cooked
- 4 flour tortillas burrito size
- 1 cup cheese
- 1 cup scrambled eggs already cooked
- 1 cup black beans drained and rinsed
- 24 Tater tots cooked
Cowboy Breakfast Burrito
- 4 MorningStar Farms® Original Sausage Patties
- 4 Wheat tortillas burrito size
- 1 cup scrambled eggs already cooked
- 1/4 cup black beans
- 1/4 cup sweet kernel corn
- 1/4 cup Pepper Mixture from above
- 1/4 cup MorningStar Farms® Bacon
- 1/2 cup cheese
- 24 Tater tots cooked
Veggie Breakfast Burrito
- 4 MorningStar Farms® Original Sausage Patties
- 4 Spinach tortillas burrito size
- 1/2 cup scrambled eggs already cooked
- 1/4 cup black beans
- 1/4 cup sun-dried tomatoes
- 1/4 cup Pepper Mixture from above
- 1/4 cup spinach chopped
- 1/4 cup red bell pepper chopped
- 1/4 cup cheese
- 24 Tater Tots cooked
Instructions
Cook MorningStar Farms® Original Sausage Patties
- Cook MorningStar Farms® Original Sausage Patties according to package directions.
- When finished cooking, chop the MorningStar Farms® Original Sausage Patties into bite sized pieces. Set aside.
Cook Tater Tots
- Cook Tater Tots according to package directions, set aside.
Scramble Eggs
- In a large bowl mix all eggs together, add milk and salt and pepper, and whisk until combined.
- In a large skillet, over medium heat, cook eggs until desired doneness is reached. Set aside
Pepper Mixture
- Heat olive oil in a large skillet, over medium high heat, add chopped green pepper and onions.
- Saute chopped onions and green peppers until tender, and fragrant, add a little salt and pepper. Set aside.
Assemble
Classic Breakfast Burritos
- On a piece of foil, lay out each tortilla.
- Top each tortillas with: 1/4 cup each: chopped MorningStar Farms® Original Sausage Patties, scrambled eggs, black beans, shredded cheese, and 6 Tater Tots.
- Fold into a burrito
- Wrap with foil
- Label
Cowboy Breakfast Burritos
- On a piece of foil, lay out each tortilla.
- Top each tortillas with: 1/4 cup chopped MorningStar Farms® Original Sausage Patties, 1/4 cup eggs, 6 tater tots, 1 Tbs each black beans, corn, pepper and onion mix, MorningStar Farms® Bacon, and 2 Tbs of shredded cheese.
- Fold into a burrito
- Wrap with foil
- Label
Veggie Breakfast Burrito
- On a piece of foil, lay out each tortilla.
- Top each tortillas with: 1/4 cup chopped MorningStar Farms® Original Sausage Patties, 2 Tbs scrambled eggs, 6 tater tots, 1 Tbs each black beans, tomatoes, pepper and onion mix, sun-dried tomatoes, chopped spinach, and red peppers. Add 1 Tbs of shredded cheese.
- Fold into a burrito
- Wrap with foil
- Label
Freeze
- To freeze, once burritos are wrapped and labeled, put in a freezer bag, and label with name and date.
- Freeze.
To Cook
- From frozen, preheat oven to 350 degrees, and baked in foil for 25-30 minutes.
- Fresh, preheat oven to 350 degrees and bake for 12-15 minutes until heated through.
