I tend to forget how amazing sandwiches can be. I often find myself stressing over dinner at 5pm, and thinking it has to be something big and fancy when a sandwich, like this ridiculously tasty grilled cheese would be perfect.
I think it is funny because when we go out we often get something sandwich like, such as a burger or a French dip or something, so why I almost never think of it for dinner at home astounds me. But I am changing my ways and this ABC is the first thing on the menu.
Trust me when I tell you this is an incredible combination of flavors and you definitely want to try it out. But I can’t take the credit. We have a friend, who by the way, won Cupcake Wars, and she has a twin sister. They are both crazy talented cooks. Anyway, a few years ago her sister started a gourmet grilled cheese sandwich shop, and it is amazing! In the name of friendship we visited a lot to show our support. Haha! The very first sandwich I ever had there was an ABC. So this is my copy-cat version. She uses a carmelized red onion mayo spread on her sandwich, but I am not that fancy. But, my sandwich still tastes awesome, and can be made right at home.
But to amp things up a bit, I candied my bacon. Now before you start patting me on the back, I feel I must mention that this is way easier than you might think. I did it by making a really easy rub out of dark brown sugar and chili powder, then used my griddle to cook up the bacon to 145 degrees F. I later used my griddle to make the sandwiches. Perfect results! Such a versatile kitchen tool. But if you really want to, you can always use pre-cooked bacon, which makes things even easier!
Anyway, this wonderfully cheesy meal was a real hit at my house, and my guess is, for those with tastebuds, the results would be the same at yours. I highly recommend making it, or maybe your own version of grilled cheese.
But for now, you have to give this a try!
