Jalapeño Popper Stuffed Chicken Breast (Keto Low-Carb) Air Fryer

Jalapeño Popper Stuffed Chicken Breast:

This chicken has all the flavors you want from jalapeño poppers, with the cream cheese, the cheddar, and the kick from the jalapeños, and of course the bacon. But to all of that you get a low carb juicy chicken breast.

When you combine the crispy, salty, flavorful bacon with the creamy goodness of the cheeses, and the kick of the jalapeño, it is like a dream dinner. Add to that the fact it can be cooked in the air fryer, and you get a fantastic low carb meal in under 30 minutes with just a few simple ingredients.

Lately I have been a little obsessed with stuffed chicken breasts (and my air fryer). They are such a fun all-in-one type of meal, and stuffing a chicken breast is such a great way to add flavor to such an economical and versatile protein.
Another meal idea in keeping with low carb, keto diet you have to add to your repertoire, is chicken marsala.

What is stuffed chicken?

Stuffed chicken is when you take a chicken breast, and butterfly it so it is not as thick, but instead of cutting all the way through, you essentially create a pocket that you then stuff with other ingredients. You then bake, pan sear, or air fry (cook) the chicken, and whatever it is stuffed with.

The results are usually a flavorful, delicious chicken dish.
The drawbacks are:

  1. When stuffed, chicken breasts tend to take longer to cook, so you want to be careful that the internal temperature reaches 165 degrees.
  2. The exterior can get dry before the inside gets done, so wrapping it up in bacon is a good idea. Always a good idea.

How long do you bake stuffed chicken breasts in the oven?

I love this recipe because it CAN be cooked in the oven, or in other words, baked. But it is soooo good in the air fryer, with the perfect crispy bacon.
If you are going to bake it in the oven, you would usually set it the oven to 350 degrees and cook 40-45 minutes, or 400 degrees and bake for about 28-32 minutes, until the juices run clear, and the internal temperature is 165 degrees.
But let me give you a few reasons the air fryer is such a good idea:
  • It is faster. When stuffed chicken breasts are baked in the oven, it takes longer, but when baked in the air fryer, the smaller space, circulated air, etc. means it cooks faster.
  • The bacon is crispier. No matter how I have tried, I can’t get the same level of crispiness on the bacon when I bake it in the oven. I have tested and retested, and while I can get crisp, it isn’t quite the same. The air fryer does magic to the bacon. Trust me!
  • Juicy inside. Air frying, is like frying, but better because no oil, which means no added calories. You get all the benefits of juicy, delicious chicken, without the pain of deep frying.

How do I bake stuffed chicken breast?

The key to baking this particular stuffed chicken is putting it on a baking sheet that has a rack, this way the air can circulate and get the bacon crispy on all sides of it.

You also need to measure the internal temperature. Baking it for an approximate time can result in dried out chicken. Even with the air fryer, I always like to start at 20 minutes, then measure the internal temperature, and then cook longer if needed.

I use an instant read meat thermometer.

When it comes to chicken, the rule of thumb is to cook to 165 degrees F internal temperature. If you do not have an instant read thermometer, you can cut into the chicken and see if the juices run clear. That is when you stop cooking!

How Does and Air Fryer Work?

An air fryer cooks by circulating hot air around food using convection technology. It is like a mini convection oven. The fan inside the air fryer circulates the hot air around the food at high speed. This will result in cooking the food and producing a crispy outer layer.

It uses the Maillard effect, which basically means a little bit of oil goes a long way, and helps you get that amazing deep fried effect without all the excess oil.

How long does it take to air fry chicken?

One of the perks of an air fryer is it has temperature control settings. This means you get a little more finesse and control over the cooking time. So how long does it take to air fry chicken? Depending on the size, thickness, and cut of chicken, at 370 degrees it should take around 20 minutes.
I like to set a timer for 18 minutes, then check the internal temperature, and cook it longer if necessary. During my tests of this air fryer jalapeño popper stuffed chicken I found it takes 20 minutes to get the desired doneness.

Is the air fryer really healthy?

An air fryer is a healthier way to “fry” foods. It uses significantly less oil. And it uses air to get the crispy exterior. And as for this recipe, it gets an extra A+ because it is low-carb, keto-friendly.

What to eat with Stuffed Chicken Breasts cooked in the air fryer:

Honestly, a good salad is usually my favorite way to go with this jalapeño popper stuffed chicken breast. But if you are not eating low-carb, this tasty rice pilaf is also amazing.

Jalapeno Popper Stuffed Chicken Breast: This chicken has an all the flavors you want from jalapeno poppers, with the cream cheese, the cheddar cheese, and the kick from the jalapenos. Then it is juicy chicken breast surrounded by crispy, salty, flavorful bacon.

Ingredients

  • 4 chicken breasts 4oz
  • 2 jalapeños
  • 4 oz cream cheese
  • 4 oz cheddar cheese
  • 8 strips bacon

Instructions

  • Butterfly chicken with a sharp knife, but don't cut all the way through.
  • Spread cream cheese evenly on the inside of the chicken breasts.
  • Divide jalapeño between the two chicken breasts. Top with the cheddar cheese. And close the chicken back up. 
  • Wrap each chicken breast with 2 slices of bacon 
  • Place chicken in the air fryer, and turn air fryer on to 370 degrees for 20 minutes.

    for those of us without an air fryer at what temperature would you recommend cooking in an oven and for how long?

      I would say 425 for 35 - 40 minutes. You may want to sear the outside first. But this is not necessary.
