How To Make Beanless Keto White Chili:
Great news most of the ingredients in a typical White Chicken Chili are already keto friendly. Yes! I love it when that happens.
The main no, no to a creamy based white chili are the beans. Nix those and you are on your way to a great low carb dish.
However without the beans you want to make sure that you have a good ratio of other ingredients so that thickness isn’t compromised.
No one wants a chill that lacks chunkiness. Fortunately I’ve got you covered with this recipe.
How To Make Beanless Keto White Chili:
- Nix the beans (obviously)
- Use Cream, Cream Cheese Or Both
- Make Sure To Use Good Ratio of Ingredients To Provide Chunkiness
- Just Follow This Keto White Chicken Chili Recipe
Steps for White Chicken Chili:
- Combine Ingredients: Combine cooked, shredded chicken and spices.
- Simmer: Melt butter and simmer broth, cream, cream cheese, and hot sauce.
- Add Ingredients: Once cream cheese is melted, add chicken and other ingredients.
- Reduce Heat and Cook. Cook and stir occasionally for 20 minutes.
- Taste and Season: Season with salt and pepper.
That’s it. Notice how there was no chopping? Just shred chicken and that’s it!
I know you have to have a smile on your face with that news. I told you it was an easy dish.

How To Thicken White Chicken Chili:
Okay at the risk of sounding like a bragger, this Keto White Chicken Chili is plenty thick. Inspired by Keto White Chicken Chili from All Recipes, I have used cream and cream cheese and used a great ratio of chicken to liquid, making this dish plenty chunky too.
This is no brothy, liquidy soup my friends. This low carb white chicken chili has depth to it. Beanless chill does not have to mean that I have compromised thickness.
In fact there have been no concessions or compromises made. This is just a great recipe to have on hand whether you are being carb conscious or not. It’s just so good.
Alright done with the bragging. For the sake of knowledge though and for other recipes, let’s talk about how to thicken soup or chili in general or how to further thicken this chili if you must.
How To Thicken White Chicken Chili:
Use A Low Carb Thickening Agent.
- Almond Flour
- Xanthan Gum
- Cauliflower

Flour is used a lot as a thickener, but classic white flour is high in carbs. Almond flour makes for a great substitute.
Cornstarch is typically used as a thickener, but it is not keto friendly. If you are on a gluten free diet you are probably no stranger to xanthan gum. It is used a lot of times in gluten free baking recipes.
It doesn’t take much of this product to thicken a recipe. Probably less than a teaspoon is all you will need.
Cauliflower is another great option.
Cauliflower blended in a food processor makes a thick sauce, which is a great base for thickness in a soup. First boil cauliflower to make it soft and ready to blend.
Use The Soup To Thicken The Soup.
Did you hear that right? Use the soup to thicken the soup. Yep you heard me right.
Take some of the solid foods from a soup and blend them and make a thick sauce just like you can with cauliflower and add it to the soup.
Use Cheese, Cream, Or Cream Cheese.
Cream, cheese, and cream cheese will add thickness and depth to the soup. I like to use all three personally.
Good Ratio Of Food To Liquid.
A good proportion of food in the broth will make the chili nice and chunky.
So many options. If you find yourself with a chili or soup that is falling short in the thickness department, no worries. Not all is lost. You have options to thicken it right up.
Can I Use Other Chicken?
You will notice that for the recipe I used Rotisserie chicken. Of course you can use other chicken though.
I just personally like using Rotisserie chicken.
Why I Chose Rotisserie Chicken For This Recipe:
- Eliminates the step of cooking the chicken. It is precooked.
- Great flavor and tenderness.
- Reasonable cost.
You do what works best for you. Already have chicken cooked up in the fridge? Use that.
Don’t mind cooking chicken before making this recipe? Do that.

Can This Be Made In The Slow Cooker?
Yes. Here is what you need to do:
- Swap pre-cooked chicken with uncooked chicken.
- Season chicken, and put in slow cooker with the butter and chicken stock, and green chilies.
- Reserve the cream, cream cheese, and cheese. Those ingredients should not cook for 3 hours plus in a slow cooker. Add them during the last fifteen minutes.
- Set to cook on high for 3-4 hours or low 4-6.
- After this time, shred the chicken. Then add it back to the pot
- Add the remaining ingredients, stir, and let simmer until heated through.
- Enjoy!
Can Low Carb Chili Be Made Ahead Of Time:
If you don’t have an hour to make it, or don’t want to throw it in the slow cooker int he morning, make this recipe ahead and simply reheat. Due to the dairy, do not freeze it.
You can refrigerate it, and reheat it. It should last in the fridge for about 3 days.
Chili that does not have a creamy base does fine in the freezer. But the texture of the cream, and cream cheese is not going to stay in tact if you freeze it.
I am weary of freezing, any cream based chilis or soups. The texture becomes compromised.
If you want to prep ahead and freeze, here is what you need to do, just cook this low carb white chicken chili up without the dairy components.
Let it cool, then transfer to a gallon sized freezer bag. Then defrost, reheat over the stove, and add the dairy components in the day you want to serve.
The flavor may be slightly different than had you made it altogether, but it should still be good.
How To Freeze Keto White Chicken Chili:
- Cook without dairy ingredients
- Cool completely
- Transfer to gallon sized freezer bags
- When ready to eat defrost
- Reheat on stove top and add dairy ingredients
Note: I have not tried freezing this soup. This is just a recommendation. Flavor may change slightly due to the modification in steps for freezing.

Just because this chili is low carb does not mean you have to skimp on the toppings. In fact, this is such a fun way to amp up the chili.

This Keto White Chicken Chili has plenty of flavor on its own. However, I love to top chili with some fave toppings.
If you are looking for a little crunch, then you can use a keto friendly tortilla chip or make your own, but classic tortilla chips are not keto friendly.
Pick one or all of the toppings and customize you Keto Chicken Chili based on your personal preference.

Keto White Chicken Chili
Ingredients
- 4 cup Shredded Chicken Rotisserie or otherwise
- 1 ½ teaspoons chili powder
- 1 ½ teaspoons onion powder
- 1 teaspoon garlic powder
- 1 Tablespoon cumin
- Salt and Pepper to taste
- 6 Tablespoons Butter divided
- ¾ cup Chicken Broth
- 2 cups Heavy Whipping Cream
- 4 ounces Cream Cheese
- 1 teaspoon Sriracha
- 1 ½ cups Monterey Jack cheese grated
- 8 ounces Diced Green Chilies 2 cans
Instructions
- In a large bowl combine shredded chicken with spices: chili powder, onion powder, garlic powder, cumin, salt and pepper.
- In a thick bottomed dutch oven or stock pot, melt 6 Tablespoons butter over medium heat. Then add chicken broth, heavy cream, cream cheese, and hot sauce.
- Bring to a simmer, and cook until cream cheese is melted and incorporated into the pot
- Add the seasoned Shredded Chicken into the pot, the Monterey Jack Cheese, and Diced Green Chiles. Stir together.
- Reduce heat to low and cook, stirring occasionally, for 20 minutes, keep an eye on it so it does not scorch the bottom of the pot.
- Taste and season with salt and pepper to preference.
- Enjoy!

This recipe looks delicious. Question can you serve the green chilies on the side for people to add or do they have to be cooked in the chili? Some of my family likes the green chilies and some does not.
