Lemon Raspberry Shortbread Ice Cream Cookie Sandwich
Creamy Blue Bunny vanilla ice cream, layered with fresh raspberries, and sandwiched between two lemony shortbread cookies. Basically the best ice cream sandwich ever!
When I think summer I think cold treats and fresh foods. Combine the two and you get Fresh Berry Shortcake Cookie Ice Cream Sandwiches. The name is a mouthful, but so is the dessert. A big, delicious, tasty, and oh so yummy mouthful. This is the perfect treat on a warm summer night!

Summer is quickly approaching. I know for many, kids are already out of school, but we aren’t quite there yet, which is good because I need a few more days to make my plans and finish a few things up before my kids are out of school all day.
I love the less strict schedule summer brings, and all the fun! But mostly I just love the sunshine and the cold treats. Especially these Lemon Raspberry Shortbread Ice Cream Cookie Sandwiches.

You guys, this ice cream is creamy, delicious, and the perfect compliment to the summery combination of berries and lemons. This dessert just screams summer, and it is super easy to make. Way easier than you might think.
Ingredients you will need to make Lemon Raspberry Shortbread Ice Cream Cookie Sandwich’s
– 2 1/4 cups Blue Bunny Vanilla Ice Cream
– 1 cup of fresh raspberries
Lemon Shortbread Cookies
– 2 Tbs Lemon Juice (fresh)
– 1 cup powdered sugar
– 1 cup butter (softened)
– 1/4 tsp salt
The cookies are quick and easy to whip up, and only take 6 minutes of baking time. Once they cool, you just mix the ice cream and fresh berries together, and use a cookie cutter or biscuit cutter to shape into the same shape as the cookies. Then assemble. And enjoy!
Tips and Tricks for Lemon Raspberry Shortbread Ice Cream Cookie Sandwich
You can even make them ahead of time and store them in your freezer, the shortbread cookies are soft enough you won’t break your teeth biting into them, at least we didn’t! (This is in no way a guarantee)
Basically, whatever you do, make sure you make them! Because they are awesome, and you might find yourself eating one or two (or more) because they taste like summer, and feel so light and delicious you may not be able to help yourself!
So let’s get to the recipe shall we?

Lemon Raspberry Shortbread Ice Cream Cookie Sandwich
Ingredients
- 2 1/4 cups Blue Bunny Vanilla Ice Cream
- 1 cup fresh raspberries
Lemon Shortbread Cookies
- 2 Tbs lemon juice fresh
- 1 cup powdered sugar
- 1 cup butter softened
- 1/4 tsp salt
- 21/2 cups of flour
Instructions
- Preheat oven to 375
- Using a hand mixer, mix together all ingredients. It will look like sand
- Using your hands, push it together to form a ball
- Roll it out on a smooth surface with rolling pin until about a 3/4 centimeter thick
- Use a round cookie cutter or biscuit cutter (2 inch) to form cookies.
- Put cookies on a cookie sheet lined with parchment or a baking mat (may need to use a spatula to transfer without them falling apart)
- Bake on an ungreased baking sheet for 6 minutes. (do not brown)
- Let cool on pan 1 minute
- Move to a cooling rack
- Using 1/4 cup of vanilla ice cream and a few berries, mix together and using biscuit cutter or cookie cutter form into same shape as cookies (See photo)
- Put between 2 cooled cookies
- Enjoy!
