Pepperoni breakfast hash, with fresh spring vegetables, crispy potatoes, and a creamy fried egg on top! The perfect breakfast for a busy day.
My youngest son has been struggling some in school. We have been taking all kinds of interventions in order to help get him on track. One of the things we are really trying to work on is his diet. He loves sugar, as most kids do. And being the child of a food blogger, he gets more than he should.
One thing we have been really working on is his breakfast, trying to give him a healthy, hearty breakfast, with protein, and some staying power. He likes pepperoni, so I thought, ”Why not try it in a breakfast hash?” And let me tell you…it was a total success! I licked my plate. My son ate it pretty well too. For him. He is pretty picky, and so he did not touch the peppers, and only ate about half the asparagus (By force)!
The ingredients in this were inspired by pizza, as that is clearly what most people think when they think pepperoni! But the truth is, pepperoni is totally versatile, and so amazing in things other than pizza. Particularly this hash. Sure you can put it in pasta salads, or pizza rolls, but this breakfast hash is the way to go. I am telling you…mind blowing!
For this recipe I used asparagus because it is so light, fresh, and makes me think of Spring. We have had a mild winter, but had snow recently, so I have been wanting Spring to hurry up and get here, and I am welcoming it and wishing for it with this dish.

Pepperoni Breakfast Hash
Ingredients
- 2 Tbs Olive Oil
- 2 cups Potatoes Goes faster if you use the pre-prepared kind like Simply Potatoes
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 3/4 cup Hormel Pepperoni Minis
- 1 cup chopped asparagus
- Salt and Pepper
- 1 large egg
Instructions
- Heat a skillet
- Put the olive oil in it, add the cubes potatoes to start browning the edges and crisping them up.
- Cut your green peppers and onion, and add them as well.
- Cook 3-5 minutes until starting to soften
- Add in asparagus and Hormel Pepperoni Minis
- Stir well, and season with salt and pepper.
- Cover and let cook a few more minute to soften everything up
- Meanwhile, in a separate skillet, fry an egg, then place over the top and serve.
