My kids are big fans of fruit tarts. At my husband’s old job there was a pastry chef that made the most delicious fruit tarts, and every time we would go to visit Dad, they each had to get one. And I am not ashamed to admit that I would indulge as well. My husband switched jobs about 18 months ago, and I have sorely missed those tarts. As I was thinking about them today I realized I had all the ingredients needed to make some tarts of my own. Not necessarily fruit tarts, and not 100% homemade, but delicious none the less.
I love this particular “recipe” because it is no-bake, no fuss, and comes together in a matter of minutes. It couldn’t get much simpler, but if you wanted it to be simpler you could simply skip the glaze (there would be less sugar that way too, if you want a “healthy” dessert). And just use the berries fresh. This is fine if serving right away, but the glaze keeps it all shiny and pretty until you are ready to serve it.
Strawberry Cheesecake Tarts
Ingredients
- 4 prepared Graham cracker mini crusts
Strawberry Cheesecake Filling
- 4 ounces cream cheese
- 5 ounces strawberry greek yogurt 1 regular size single serve container
- 1/2 cup confectioners sugar
Topping
- Fresh strawberries diced
- Whipped cream
Glaze
- 1 Tbs water
- 1 Tbs sugar
- 1 Tbs corn syrup
- 1/4 cup strawberry preserve
Instructions
Filling
- In a small mixing bowl blend/whip together the greek yogurt, confectioner's sugar, and cream cheese with a hand mixer. Continue to blend/whip until smooth.
Glaze
- Put preserve, light corn syrup, water and sugar in saucepan on medium heat, stirring as it heats. It should sort of melt all together. Stir until nice and smooth.
Assembly
- Fill mini graham cracker crust with strawberry cheesecake filling
- Top with fresh cut strawberries
- Spoon glaze over top of fresh strawberries
- Put a dollop of whipped cream on top and enjoy!

You can lighten this recipe up some by using a low fat cream cheese, and skipping the sugar. The greek yogurt is usually sweet enough on its own, or you could puree some strawberries into the cheesecake filling too if the strawberries are ripe and sweet. It is also possible to make your own crust. This particular strawberry cheesecake filling is pretty good in other shells as well, sugar cookie, tart shell, or even a puff pastry shell would work. I just love Graham!
