Super Green Kale Salad
A fantastic kale salad with heft, crunch, tang, sweet, salty, fresh goodness sure to please. This power salad is loaded with salty bacon, crunchy cucumber, delicious edamame, and healthy quinoa, and a great dressing.
I have been loving the sweets lately, I mean who doesn’t love things like Eazy Overnight Cinnamon Rolls and Caramel Apple Cheesecake? In an attempt to slim down a bit before my husband and I hit the 10 years of marriage mark, I decided to try and eat a few less brownies and a few more salads.
This is one of my all time favorite recipes. I happened upon it. I bought a container of baby kale, which I love, and wanted a salad. I threw in just about everything I could find. Most of which was green, hence the name. The only things in it that aren’t green are the bacon and quinoa. And both are fantastic and necessary.

My kids ate it, my husband ate it, and I took some to a friend and she ate it too. The grapefruit dressing was a great topper, and the turkey bacon gave it just the right salty goodness to make it more than a side. It works great at a side, but makes a pretty fulfilling lunch too!
And it is packed full of stuff that is not just delicious, but so good for you. Customize it if you don’t like something in it. And if you hate kale, this might just be the salad that changes your mind. Just remember, to get the best flavor, massage your kale greens with the dressing. Your hands get dirty, but it helps with flavor.
Super Green Kale Salad
Ingredients
- Baby kale as much as you like, 3-4 cups
- 1/2 c green apple diced
- 3 green onions chopped
- 1 cucumber diced
- 1 cup edamame
- 1 cup chopped turkey bacon
- 1 cup cooked quinoa
Dressing
- 2 Tbs olive oil
- 1 Tbs lemon juice
- 2 Tbs grapefruit juice
- 2 tsp honey or granulated sugar
Instructions
- Mix together dressing ingredients
- Mix together salad ingredients
- Toss salad with dressing and serve
