Super Green Kale Salad- Apple, Bacon, Quinoa, Edamame Salad

Super Green Kale Salad

A fantastic kale salad with heft, crunch, tang, sweet, salty, fresh goodness sure to please.  This power salad is loaded with salty bacon, crunchy cucumber, delicious edamame, and healthy quinoa, and a great dressing.

Serve as is, with Breaded Pork Chops or even just with Garlic Bread Twists Recipe for a great meal.

I have been loving the sweets lately, I mean who doesn’t love things like Eazy Overnight Cinnamon Rolls and Caramel Apple Cheesecake? But this salad is so good you will skip the treats, and head over for a second helping. This is one of my all time favorite recipes. I happened upon it. I bought a container of baby kale, which I love, and wanted a salad. I threw in just about everything I could find. Most of which was green, hence the name. The only things in it that aren’t green are the bacon and quinoa. And both are fantastic and necessary.

Wowzers!

My kids ate it without complaint, and I took some to a friend and she ate it too. The grapefruit dressing was a great topper, and the turkey bacon gave it just the right salty goodness to make it more than a side. It works great at a side, but makes a pretty fulfilling lunch too!

And it is packed full of stuff that is not just delicious, but so good for you. Customize it if you don’t like something in it. And if you hate kale, this might just be the salad that changes your mind. Just remember, to get the best flavor, massage your kale greens with the dressing. Your hands get dirty, but it helps with flavor.

Make Kale More Edible with These Easy Tips

Kale is a nutrient-packed powerhouse, but it can be tough—literally! To make it more enjoyable:

Massage It: Rub kale leaves with olive oil, lemon juice, or a pinch of salt for 2-3 minutes to soften the texture and mellow the bitterness.
Remove Stems: The stems can be tough and fibrous—strip the leaves away before chopping.
Slice Thinly: Thin ribbons of kale are easier to chew and blend well into salads or dishes.
Pair with Bold Flavors: Dress kale with tangy vinaigrettes, creamy dressings, or sweet toppings like dried fruit to balance its earthy taste.

With these tips, kale goes from tough to tasty!

Ingredients

  • Baby kale as much as you like, 3-4 cups
  • 1/2 c green apple diced
  • 3 green onions chopped
  • 1 cucumber diced
  • 1 cup edamame
  • 1 cup chopped turkey bacon
  • 1 cup cooked quinoa

Dressing

  • 2 Tbs olive oil
  • 1 Tbs lemon juice
  • 2 Tbs grapefruit juice
  • 2 tsp honey or granulated sugar

Instructions

  • Mix together dressing ingredients
  • Mix together salad ingredients
  • Toss salad with dressing and serve
