You guys, I really like this bread. Now, granted it is not the best bread ever. It is not even the tenth best bread ever. But it is the BEST bread you can make, homemade, in just 7 minutes with 1 dirty dish! I mean c’mon…I can’t even drive to the grocery store, walk the aisles, choose my bread, check out, get back in my car and get home in 7 minutes.
So this bread is quite literally easier than buying bread!
You do have to let it cook for about and hour and a half, but the real time required by you, if you decide to knead by hand, instead of using a mixer, is 7 MINUTES! A total win for the busy mom, and seriously good when you are eating something like Corn Chowder or Beef Stew and want a nice crusty bread to go with it.
I have made it several times, and am updating the photos, so if you got here from Pinterest and the pictures aren’t all the same, that is why!
I have been on a Gilmore Girls kick lately, watching tons and tons of Rory and Loralei and unfortunately picking up some of their bad eating habits..ya know, take out for every meal, tons of sugar, no regard for calories or health.
But I am determined this week to make dinner every night, and this bread is certainly helping make that easier. I have several slow cookers, so I can make bread in one, and a nice stew in the other, and not think about dinner again until my hungry family comes clamoring! Plus, the lack of dishes is really, really nice! I used a 5 quart slow cooker for this bread.
Making Slow Cooker Bread
All you have to do is:
- Mix up the ingredients
- Knead for about 5 minutes in a stand mixer
- Then put your ball of dough in the crock pot on high for an hour and a half.
- Broil: The bottom gets nice and crispy, but the top can be a little soft, so then you stick it in the oven on broil for 2-3 minutes to brown it up and you are good to go!
Pretty easy right? Do yourself a favor and give it a try. You can sub out white sugar for the honey if you don’t have any, and you can even add in some seasonings like rosemary and garlic to give it different flavor.
Crock Pot Bread Tips
A few things to note:
- Make sure your yeast foams or it won’t work.
- A quality flour will result in a quality bread. My favorite is Bob’s Red Mill.
- You want to get the dough in the center of the crock pot or you will get parts that are browned more than others.
- Use the paper towels, and lay them across the top to catch steam or it might get too soggy.
- Top with butter, jam, or honey for even better flavor!

7 Minute Crock Pot Bread
Ingredients
- 1 TBS active dry yeast or instant yeast
- 1 TBS honey
- 1 cup warm water
- 2 3/4 cup all-purpose white flour
- 1 TBS white sugar
- 1 tsp salt
- 2 Tbs olive oil
Other
- Parchment paper
- 3 paper towels
Instructions
- Mix together warm (not hot) water, yeast, and honey, and let sit for a minute for yeast to foam
- Stir together flour, sugar, salt, and then mix with yeast mixture and olive oil
- Stir together with a wooden spoon
- Knead for 5 minutes, either by hand or with a stand mixer and hook attachment. Do not short cut this time. Check the dough, it should be elastic, and not stick to your hands too much, and should form a nice ball. If this does not happen, knead a little longer until it reaches this stage.
- Line a crock pot with parchment and place ball of dough in center
- Put paper towels over the top, and put the lid, very slightly ajar over that, this will help absorb some of the moisture so the top of your bread is not mushy and wet while the bottom is crispy and hard.
- Cook on high for an hour and a half, or until bottom is browned (You can just lift it out with the parchment to check how brown the bottom is)
- Remove from crock pot, put on a baking tray, and into a preheated oven set to broil on high. Broil 2-3 minutes or until you reach the desired golden brown.

Can this be made with whole wheat flour?My husband is a diabetic and cannot have white bread.

I haven’t tried it, I know whole wheat is denser, so maybe use less, or add a little more oil or liquid to get a good dough consistency.

It looks as though your pot is a round one. Mine is oval. Hoping it works ok re over cooking some areas if dough isn’t centred. Keen to give this a go soon! Also curious as to whether it could be used to make rolls in the oven or slow cooker.

I have never tired making rolls. But I have made it in an oval crock, and it worked great. Just shape it to fit the shape of your crock.

i am right now letting the dough rise one more time in the slow cooker on low then will increase to high for about that hour and a half–and i DON’T EXPECT a bad outcome LOL as there has to be another BREAD FANATIC THAT HAPPILY TOASTS,eats etc any baking mistakes !
Now, i got a “bread machine” over at a Good Will type store for 5 dollars/spotless etc and finally woke up and simply USE THE DOUGH SETTING to mix and work that dough and then start the rise process in a well greased pot…then simply turn it out into the large high sided cast iron fryer i use for just about everything to rise up again and then begin to bake WHEN IT’S NOT SUMMER IN TX–
i have had GOOD LUCK with these crock pots for baking cakes,Boston brown bread–have NOT tried a soda bread but a corn bread came out FINE-NO COMPLAINTS-

You do not have to use honey, but you would need to replace it with sugar, it helps the yeast. You could use less. Also you can use nuts, seeds, etc. I have made this slow cooker bread with lots of variations. Thanks for asking.

Made this bread this morning. Easy peasy is right! s
All of the rising happened during the 1 1/2 hours it took mine to bake using my old round “Crockery Chef” The Sides were a little over brown so next time will start checking it after 1 hour. Brushed it with butter and broiled for about 2-3 minutes with the rack in normal baking position. On the cooking rack I brushed the again with butter and included the sides. Was saving it for dinner, but took off slice and OH MY!! Perfect outer crust and delicious soft interior. The texture was like that of a bread dough that I normally rise two times before shaping and the final rise!! WOW!! Thanks for the great recipe!
PS. It was easier for me to cut two strips of oiled parchment paper than lay an entire sheet in the crock. I also oiled the crock before laying in the parchment. The only change to the recipe was adding an additional half tsp. of salt.

First time making bread, overall it turned out well. However it is a little soft in the middle. Should I cook it more in the crockpot or the oven? I need to practice but very happy with the results. Could this be used as a raisin cinnamon bread?

I’ve made it several more times since my last comment. The last few times I added 2 tsp of Italian herb seasoning and a tsp or so of minced garlic (from the jar) and just finished getting another one started this morning. To brown the top after removing from crock, I buttered and sprinkled with additional herbs before putting under the broiler. If you slice, butter or brush with olive oil and broil for a minute or two before serving, it’s great for crusty garlic/herb bread to compliment any pasta dinner!

Hi! Currently baking the bread right now. It hasnt risen as much or as prettily as yours in the video. I’m also at 100 mins in the crockpot (on high) and it’s still doughy in the middle. The bottom has a nice crust, but it’s not really browned. Any feedback on what could be going on? It smells Heavenly and we want to keep making this recipe; I just want to figure out what I’m doing that’s taking away from the “easy peazy” aspect.

Hailey, Do you have a higher setting on your crock pot? It is possible my crock pot runs hotter than yours. That can be the difficulty with inconsistencies between brands. If you want the bottom to be browned more you could flip it under the broiler. As for the rising, I am not sure. I make this regularly, and depending on how cold the room is, how old the yeast is, etc. it can impact the rise. Let me trouble shoot a little and get back to you. What brand and kind of yeast did you use?

Hi Rachael! No, my crockpot doesnt have a higher setting, but we made the bread again tonight and it worked! Here’s what we found: 1) Somehow my boyfriend missed the part about adding the olive oil the first time we made it, and I didnt notice he hadn’t put it in there. I dont know how crucial olive oil is to the recipe, but the second time around we made sure to not forget it. 2) We did 2tbsp of white sugar, rather than 1 tbsp of honey Nd 1 tbsp of sugar. Not only did the bread rise a little better this time around, it was also done in 90 mins! Hooray! We are letting it cool before trying it. If it seems “sweet” due to the 2tbsp of sugar, do you have any advice?

Everyone went as planned with my first attempt at crock pot bread with this recipe. Just one thing I’ll change. It seems like it has too much yeast in it giving it an off taste. It’s so easy though I’m going to try again, but cut my yeast in half.
