Rotisserie Chicken chunks, crunchy gala apples, red grapes, red onions, celery, avocado, this salad has it all, and is the most satisfying and delicious picnic food! Are you dreaming of Summer yet?
The weather is warming up, and all my kids want to do is be outside. Our “Park Day” plans just got a whole lot tastier. You guys, we spend a ridiculous amount of time at the park during the summer. My 3 year old could swing and slide for hours. I, on the other hand, don’t always have hours to kill sitting under a tree, or chasing kids around the wood chips. So I always try to use the time to my best advantage. I pack food so I can have lunch, and I use my phone to work while my kids are playing. Thank heavens for a good data package, or our park trips would be extremely expensive.
So I am going to tell you all about my phone plan, but before I do, can we just gawk at this chicken salad? It has flavor, texture, and crunch. The best part is it is super easy. Because I use a rotisserie chicken it is a no cook meal. It takes just a cutting board, a bowl, and a knife! Minimal dishes and tons of yummy flavor. I could eat this salad every single day.
I pack a tub of it, some rolls, and some freshly washed lettuce leaves, grab my kids and my Samsung Galaxy (which was on rollback for $99 from $149) and we can head to the park for as long as they want to play. My motto in the summer is “If the feet aren’t black we didn’t play long enough.” They earn those nightly baths. Okay…if I am being honest, it might be weekly baths. Bi-weekly? Hahaha
Regardless…the salad rocks, and being able to take my kids to play, and still be able to get some of my to-do list checked off is a huge win for me.

Best and Easiest Chicken Salad Sandwich
- 2 cups Rotisserie Chicken cut into chunks
- 3/4 cup celery cut small
- 3/4 cup gala apple cut small
- 3/4 cup grapes halved
- 1/2 cup red onion diced small
- 2 avocados
- 12 Rolls Hard French Dinner Rolls
- 12 pieces Romaine Lettuce
- 1/2 cup olive oil mayo
- 1 Tbs lemon juice fresh squeezed
- 1/2 tsp paprika
- 1/2 tsp black pepper
- Chop chicken, celery, gala, grapes, and red onion and put it in a large bowl
- In a small bowl, mix together mayo, lemon juice, paprika, and black pepper. Taste, and adjust if desired. A little more lemon can give it a zingy flavor.
- Pour the sauce over the chicken mixture, and stir it all together.
- Slice your avocado, remove the pit and skin, and chunk it up. Carefully stir it into the salad so it maintains it's shape and does not turn your salad green.
- Slice your rolls, and wash your lettuce.
- Assemble by placing the lettuce into the roll, and scooping your chicken salad onto the lettuce, this will keep rolls from getting soggy.
