Chicken Salad Sandwiches

This Chicken Salad Sandwich is the perfect mix of creamy, crunchy, sweet, and savory—basically everything you want in one bite. Tender chicken gets tossed with crisp celery, juicy grapes, sweet apples, creamy avocado, and just a little red onion for a pop of flavor. The result is a fresh, flavorful chicken salad that feels a little elevated but is still incredibly easy to make.

Every bite has the perfect balance of textures: creamy dressing, crunchy fruit and veggies, and hearty chicken piled onto soft bread. It’s the kind of sandwich that feels light yet satisfying—perfect for lunch, picnics, or those days when you want something fresh that still fills you up. Once you try this combo of flavors, plain chicken salad just won’t cut it anymore.

What You Need to Make This No Cook Chicken Salad Sandwich

It has flavor, texture, and crunch. The best part is it is super easy. Because I use a rotisserie chicken it is a no cook meal. It takes just a cutting board, a bowl, and a knife! Minimal dishes and tons of yummy flavor. I could eat this salad every single day.

Tips for Making the Best Chicken Salad Sandwiches

1. Start with flavorful chicken
Great chicken salad starts with great chicken. I like to use rotisserie chicken. But you can use roasted, grilled, baked, or poached chicken that’s well seasoned. Rotisserie chicken is an easy shortcut and adds lots of flavor.

2. Chop everything to a similar size
For the best texture, dice your chicken and mix-ins (like celery, apples, grapes, or onions) into bite-sized pieces. This helps every bite have the perfect balance of ingredients. I like a smaller chop, but you can chop to your preference. 

3. Add crunch for texture
A good chicken salad isn’t just creamy—it has contrast. Ingredients like celery, apples, grapes, almonds, pecans, or walnuts add a satisfying crunch. I use apples and celery, but you can add in nuts if you’d like. 

4. Balance creamy and fresh flavors
Mayonnaise is the classic base, but you can lighten it up with a little Greek yogurt, sour cream, or mashed avocado. I like using the olive oil mayo. Adding something acidic like lemon juice or vinegar brightens the flavor and keeps the salad from tasting heavy.

5. Season well
Don’t forget salt and pepper! A little garlic powder, onion powder, or fresh herbs like dill, parsley, or chives can make a huge difference in flavor. I kept it simple for this recipe, but this Chicken Salad recipe is heavy on the herbs and oh so tasty. 

6. Let it chill before serving
Chicken salad tastes even better after it has had time to sit in the refrigerator for 30–60 minutes. This allows the flavors to meld together.

7. Toast your bread
Lightly toasted bread adds structure and prevents the sandwich from getting soggy. It also adds a nice contrast to the creamy chicken salad.

8. Layer with fresh ingredients
Add lettuce, tomato, avocado, or sprouts to make the sandwich even more flavorful and fresh.

9. Don’t overdress the salad
Start with less dressing than you think you need. You can always add more, but too much can make the chicken salad heavy or soggy.

10. Serve it different ways
Chicken salad doesn’t have to go on bread. Try it in croissants, wraps, lettuce cups, pita pockets, or even over a green salad.

Ingredients

  • 2 cups Rotisserie Chicken cut into chunks
  • 3/4 cup celery cut small
  • 3/4 cup gala apple cut small
  • 3/4 cup grapes halved
  • 1/2 cup red onion diced small
  • 2 avocados
  • 12 Rolls Hard French Dinner Rolls
  • 12 pieces Romaine Lettuce

Sauce

  • 1/2 cup olive oil mayo
  • 1 Tbs lemon juice fresh squeezed
  • 1/2 tsp paprika
  • 1/2 tsp black pepper

Instructions

  • Chop chicken, celery, gala, grapes, and red onion and put it in a large bowl
  • In a small bowl, mix together mayo, lemon juice, paprika, and black pepper. Taste, and adjust if desired. A little more lemon can give it a zingy flavor.
  • Pour the sauce over the chicken mixture, and stir it all together.
  • Slice your avocado, remove the pit and skin, and chunk it up. Carefully stir it into the salad so it maintains it's shape and does not turn your salad green.
  • Slice your rolls, and wash your lettuce.
  • Assemble by placing the lettuce into the roll, and scooping your chicken salad onto the lettuce, this will keep rolls from getting soggy.
