Best and Easiest Chicken Salad Sandwich
Ingredients
- 2 cups Rotisserie Chicken cut into chunks
- 3/4 cup celery cut small
- 3/4 cup gala apple cut small
- 3/4 cup grapes halved
- 1/2 cup red onion diced small
- 2 avocados
- 12 Rolls Hard French Dinner Rolls
- 12 pieces Romaine Lettuce
Sauce
- 1/2 cup olive oil mayo
- 1 Tbs lemon juice fresh squeezed
- 1/2 tsp paprika
- 1/2 tsp black pepper
Instructions
- Chop chicken, celery, gala, grapes, and red onion and put it in a large bowl
- In a small bowl, mix together mayo, lemon juice, paprika, and black pepper. Taste, and adjust if desired. A little more lemon can give it a zingy flavor.
- Pour the sauce over the chicken mixture, and stir it all together.
- Slice your avocado, remove the pit and skin, and chunk it up. Carefully stir it into the salad so it maintains it's shape and does not turn your salad green.
- Slice your rolls, and wash your lettuce.
- Assemble by placing the lettuce into the roll, and scooping your chicken salad onto the lettuce, this will keep rolls from getting soggy.
