Here’s what makes this chicken turn out juicy every time:

1. Pound for Even Thickness

Chicken breasts are naturally thicker on one end. By pounding them to about ½–¾ inch thick (1.5 cm at the thickest part), you ensure even cooking. No more dry thin ends and undercooked centers. It is worth the step. 

2. High Heat = Juicier Chicken

Baking at 425°F (220°C, 200°C fan) cooks the chicken quickly, sealing in juices while creating beautiful golden edges.

3. Don’t Overcook

The magic number is 165°F internal temperature. Use a meat thermometer if you have one — it’s a game changer.

4. Rest Before Slicing

Let the chicken rest 3–5 minutes before cutting. This keeps all those juices inside instead of running out onto your cutting board.

  • 4 chicken breasts (5–6 oz each)
  • 3 teaspoons olive oil

Simple Seasoning Blend

This versatile savory seasoning blend works for almost any meal:

  • 1 teaspoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Optional: pinch of red pepper flakes for heat

Fresh chopped parsley for garnish (optional)

  1. Preheat oven to 425°F (220°C).
  2. Pound the chicken to about ½–¾ inch thick at the thickest part. This ensures even cooking and tenderness.
  3. Mix the seasoning in a small bowl.
  4. Prepare the pan. Line a baking sheet with foil or parchment for easy cleanup.
  5. Season both sides.
    • Place chicken on baking sheet
    • Drizzle with olive oil and rub to coat.
    • Sprinkle generously with seasoning.
    • Flip, repeat oil and seasoning on the other side.
  6. Bake for 16–20 minutes, depending on thickness, until internal temperature reaches 165°F.
  7. Rest 3–5 minutes, then serve or slice.
