I love banana bread. Love it. I know I have mentioned a time or two how much I love a good quick bread, and often buy bananas just to make banana bread. I use a super simple recipe that is just one bowl, no mixer needed. But a few weeks ago, I saw a banana bread with granola on top, and I have been dying to try it for myself. So I took that easy banana bread recipe and used it as a base, then added to it.
For this recipe, I knew I wanted extra moist bread, so I decided to try the addition of a great whole milk organic Greek yogurt. I went with vanilla which I was super happy about. And for crunch, some almonds and a granola topping. I love texture in breads. A clear glass baking dish is great to use so you can see how browned your bread is to your liking. And let me tell you, all of my imaginings were satisfied by this bread. It was yummy.
Who Knew Just Adding Yogurt And Granola Could Make Something That Was Already Awesome, Even More So?
Let’s talk about granola and yogurt for a minute! Usually when I think of the two, the first thing that pops into my head is a parfait. And a parfait is always a good idea, especially for an after school snack. But not all parfaits are created equally. The quality of yogurt, granola, and fruit play a huge role. So of course while I was shopping at Target, for something I am sure I really did NEED, I picked up some Wallaby Blueberry Organic Greek Yogurt and Van’s Cranberry Almond Granola. I also happened to grab fresh berries. So naturally, I had to make parfaits. I added blueberries, and made a bunch of these cute little jars so my kids would have easy to grab after school snacks.
Doesn’t that look yummy? I love storing my parfaits in these adorable little jars. They are so fun to eat out of, and easy to take on the go.
But Then I Wanted To Think Outside The Parfait Box
So I had to make this tasty quick Cranberry Almond Banana Bread. While awesome for breakfast or snacking, the possibilities with Vans and Wallaby are endless! My family snacked on this easy Cranberry Almond Banana Bread all weekend and asked me to make another loaf. Since I found both the Vans granola and the Wallaby Yogurt on a Cartwheel offer, I complied without complaint. Let’s be honest, I wanted more too.
Anyway, we loved this bread, and I loved it fresh, hot, out of the oven with some butter melted right on top!

Cranberry Almond Banana Bread
Ingredients
- 3 bananas brown is best, you want them very ripe
- 1/3 cup melted butter
- 1 egg whisked with a fork
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 cup Wallaby's Organic Greek Vanilla Yogurt
- pinch of salt
- 2 cups all-purpose flour
- 1/2 cup sliced almonds
- 1 cup Van's Cranberry Almond Granola
Instructions
- Preheat oven to 350 degrees
- Mash bananas in a large bowl with a fork.
- Add melted butter.
- Whisk an egg with a fork and add it in.
- Now add sugar, vanilla, baking soda, yogurt, salt, flour, and sliced almonds. Mix well
- Spray a 9x4x4 loaf pan with non-stick cooking spray
- Pour batter into loaf pan.
- Sprinkle Van's Cranberry Almond granola over the top and lightly press it down.
- Bake for 50-60 mins, until browned, and toothpick inserted in center comes out clean.
- Cool on a cooling rack, remove from pan. Slice, serve, and enjoy!
