Easy Tomato Soup
Ingredients
- 2 tbsp olive oil or butter
- 1/4 cup onion chopped
- 2 cloves garlic
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp tomato paste
- 14.5 ounce peeled tomatoes
- 3 cups water
- 1/3 cup heavy cream or almond milk
- 2/3 cup feta cheese crumbled
Instructions
- Heat olive oil (butter) over medium heat in a large pot (Dutch Oven). Add the onion and cook for 2 minutes, stirring frequently. Add the garlic and cook for 1 minute. Add tomatoes, salt, pepper, , oregano, basil, tomato paste and water. Bring to a boil, then reduce to a simmer.
- Cook on medium heat for 20 minutes, until the tomatoes are tender and cooker. Using an immersion blender, blend until smooth. Add the cream and feta cheese. Cook for 1 more minute.
- Add more salt if needed. Serve warm.

How many servings does this make? Are the nutrients given per serving or for all the ingredients in the soup?

If you were to look at the top of the recipe card, you will see servings are on that. It has 6 servings. My nutrition calculator calculates per serving, but unfortunately it tends to be a little glitchy so I always recommend you run the nutrition yourself with your specific brands and ingredients.

Very good, I added more salt, pepper, and garlic powder and I used 1 can of tomato paste, I wanted my soup to be more tomatoee tasting. This probably increased the carbs, but still a healthy soup.

Hi, the recipe says to add sweetener but not what kind or how much. Am I missing something?

Oh shoot, no sweetener in this recipe. If your tomatoes are too acidic and you want to mellow them out you can add a keto friendly sweetener.
