A tomato base soup with zucchini noodles (zoodles), garlic, and fresh basil.

My garden was a late bloomer so to speak this year. For weeks I saw my friends and family harvesting loads of tomatoes, cucumbers, and other yummy goodness, and I stared at plants with green tomatoes, and the remnants of my pest eaten cucumbers. Well my turn has come and I have lots of yummy tomatoes and zucchini.

My favorite way to use zucchini is to spiral slice it, and I was so lucky to get a spiral vegetable slicer from #Brieftons. It was the perfect way to prepare the zucchini for this very simple dish.

This was an amazing way to use my garden harvest, and while I did not intend for it to be soup at first, the juices from the zucchini and the tomatoes made such a wonderful base. It was delicious!

Delicious base for this tasty vegetable soup is created from the zucchini and tomato juices.

Ingredients

  • 2 large garden tomatoes chopped
  • 1 medium sized zucchini spiral sliced
  • 1 clove of garlic minced
  • 1 tsp olive oil
  • 2 basil leaves

Instructions

  • Spiral slice zucchini with a Briefton's spiral slicer
  • Heat oil in a pan, add minced garlic and zucchini
  • Saute for a 3-4 mins
  • Add chopped tomatoes, with juices, and let cook 3-4 more minutes
  • Remove from heat, put in a bowl, and top with fresh basil

So let’s talk about the spiral slicer. I own a few different ones, but this one is my favorite, and I am not just saying that.

What I like

  • The noodles are flat, and you have two size options. These are like a linguine rather than a spaghetti. Great for the low carb cook, or raw foodist. I loved that I could go with thinner or thicker noodles.
  • The slicer is small. It fits in my utensil drawer. I love that it does not require a whole cabinet, and that I can hold it in one hand.
  • It has these great little handles too so you can hang on to it. It has a little cap that you can press into the vegetable you are slicing, and hold on to so that you get as much of the vegetable sliced as you can. It is really easy to use. You literally stick whatever veggie you want into the cone, and twist it. Eazy Peazy!
  • It came with everything you’d need to keep it nice. It has the slicer, the finger-guard cap, a cleaning brush, instructions, and even recipes!
  • The slicer is really easy to clean. You can just rinse it, and then use the brush to clean off anything that sticks.
  • Not hard to use. Not only was it easy to figure out how to use, but the blades cut well. It is not too hard to twist even hard vegetables like carrots!

What I Didn’t Like

The only thing I don’t like is that the cone shape makes it hard to get every bit of the zucchini (for example) sliced, but I usually just pull out the rest and dice it small. And that slight inconvenience is worth it to have such a small and handy tool!

    These all look so yummy! I found a couple recipes using spiral zucchini and I haven't ever tried them because I don't have a spiral slicer. :( Now I really I might just have to invest in one!

    Love the pine nut basil idea! I recently got a very similar spiral slicer (called a veggetti) and I love it. I also wish that I could spiral the whole vegetable, but I'm happy to munch on the little nubbin as I cook!
