You may remember last week I posted about my backyard BBQ and had a bunch of fun mustard themed recipes, from deviled eggs to potato salad, and of course, the star of the show, the animal style burgers? Well this amazing salad and dressing also made an appearance.

When I think mustard in salad dressings I usually think honey + mustard. But this is vinegar, mustard, onion, and poppyseeds. Plus more. It rocks.

I actually got this dressing recipe from a friend, and with just a few tweaks, I made it my own, and now keep a jar of it in my fridge. I absolutely love the onion, vinegar, poppyseed, and mustard flavors it has over a spinach salad. It is ridiculously good, and also ridiculously easy to make.

Summer time is salad time. At least for me…

You know at the end of winter when your “fat pants” are starting to become your “regular pants” and you start realizing that bathing suit season is just around the corner? Well this is the salad to help you make the transition from eating those comforting, cheesy, creamy, wintery foods, to the light, fresh, colorful foods of summer.

Why? Because it just tastes so good.  And it is pretty!

Fresh berries, creamy feta, crunchy almonds, and anti-oxidant rich spinach, all topped with this sweet and savory dressing. What is not to love about this glorious combo? Sure it is not as healthy as say, just kale. But it sure beats the brownies, pizza, and cheeseburger diet I have been enjoying lately, and will certainly help me look better in a bathing suit!

Don’t be afraid of making your own dressing. You only have to do it once, then you have a nice bottle in the fridge to use for a week or two.

Ingredients

Poppyseed Dressing

  • 1 cup Olive Oil
  • 1/3 cup Red Wine Vinegar
  • 1/2 Cup Red Onion
  • 1/2 tsp Ground Mustard
  • 1/2 TBS Poppyseed
  • 1/2-3/4 cup sugar
  • Salt a dash

Spinach Salad

  • 1 bag washed and prepared baby spinach
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup strawberries or blueberries
  • 1/4 cup feta crumbles
  • 1/4 cup slivered almonds

Instructions

  • Put everything in a food processor and pulse until processed to desired consistency.
  • Assemble salad and drizzle desired amount of poppyseed dressing over the top.

    Something we’ve found to be amazingly good in spinach salads are dried cranberries. We blend them into a raspberry vinaigrette dressing and it’s a hit every time.
