I keep seeing pumpkin memes all over. And I laugh, and cheer! I love pumpkin, so I love Fall because you can get pumpkin anything. And those memes mean pumpkin everything is now available. Yummy.
These oatmeal squares are a fantastic way to enjoy that pumpkin! They make a great snack while hiking or biking, or can even be used for an on-the-go breakfast! I mixed up a batch, gobbled it all down, so I then mixed up another.
I got the inspiration for these from Chelsea’s Messy Apron’s Copycat Nature Valley Oatmeal Squares. Oatmeal squares and pumpkin, a totally delicious combination any day of the week! Or in my case, every day of the week.
Plus they are pretty easy to make. Which makes me very happy!
I like to make them at night, and refrigerate them overnight so I can enjoy them in the morning.
But don’t limit these beauties to just mornings. These are a perfect snack for an early fall hike or family bike ride. You know, when the weather is still warm enough to enjoy being outside, but not so hot that you are dying? Well I love this weather, and try to enjoy as much time outside as I can before the snow starts to come.

I can’t wait to make these, just would like to replace the white choc. chips with something else. I’m not a fan of white choc. I wonder if plain old semi-sweet chocolate chips would be ok.

I just made these and LOVE the flavor. However, the center seemed to moist. We had to eat them with a fork. What is the texture supposed to be like? Going to make them again and cut back on the chips. Thank you for sharing this pumpkin recipe!

I found that if I cooked them a bit longer that helped with the centers. I also put them in the fridge so they would set up better. The moisture content in the pumpkin can vary, so it can help to add a little extra oats as well if they are looking too wet. Hope that helps!
