Remember how I talked about saving money during the holidays with meal planning, cooking budget friendly meals, and freezer meals? Well today’s post goes hand in hand with that because it is all about using your Thanksgiving leftovers!!!
Using your leftovers is totally going to save you money because you already have the food, it means less waste, and ummm a nice little perk is that they taste awesome!!!
Okay, so you are sick of turkey, stuffing, mashed potatoes, and sweet potatoes in their regular form. Well how about in a new form? How about a nice little waffled form? You got it!!! Leftovers waffles.
These babies are sooooo good. Like really the perfect way to start your day because they not only taste amazing, but will fill you up and give you energy to get on and go during this chaotic season. Plus with the money you saved, you could probably go treat yourself to something nice! I am saving up for a new camera for this here blog! It is a big ticket item, and a ways off, but using my leftovers is definitely going to help me get there faster.
But the nice thing is these leftovers waffles are so easy to make. You basically just mix them with waffle mix, and cook in your waffle iron.
Thanksgiving Leftover Mashed Potato Waffles Thanksgiving Leftover Sweet Potato Waffles Thanksgiving Leftover Stuffing Waffles Cranberry Syrup
Ingredients
- 2/3 cup "just-add-water" pancake mix
- 1/4 cup mashed potatoes
- 1 tbs Kraft shreds cheese
- 1/3 cup water
- 2/3 cup "just-add-water" pancake mix of choice
- 1/3 cup mashed sweet potatoes
- 1/3 cup water
- 1/2 cup Stove Top Stuffing
- Cooking spray
- 1/3 cup cranberry jelly
- 2 mandarin oranges juiced
- 1 tsp sugar
Instructions
- Mix everything together in a bowl
- Scoop out about 1/2 a cup and place in center of Belgium waffle iron
- Cook in preheated waffle iron
- Mix everything together in a bowl
- Scoop out about 1/2 a cup of mixture into center of belgian waffle iron
- Cook in preheated waffle iron until browned
- Spray waffle iron with cooking spray
- Put stuffing in center
- Cook in preheated waffle iron for 2-3 minutes until outside is crispy and it holds its shape
- Put everything in a blender and blend until smooth
- Heat if desired
