Mmm Salmon!
I love fish, but lately my kids have not liked seafood the way they once did. I can get them to eat shrimp, crab, or lobster any day of the week. They like Tilapia, and tolerate the rest.
This means I have not made fish nearly as much as I would like. But I realized something this morning when I started craving salmon at 9 am– I don’t have to fix it for my kids. I buy it from Costco in the bags, frozen, because I don’t live anywhere to get good fresh salmon. It comes individually packaged in fillets, so why not make it for just me?
It is super easy to do, and I can bake it up while throwing together PB&J’s for the less-sophisticated palettes in my house.

We had this for supper last night and it was delicious! Loved the tang of the mustard. Appreciated using only one pan, making clean up easy. Will definitely make this again, many times!
