BBQ Chicken Burritos
These flavorful BBQ Chicken Burritos are made with shredded chicken, your favorite BBQ sauce, topped with beans, corn or any of your favorite ingredients.
They are awesome to make ahead, freeze, and enjoy when you are short on time, but still want big flavors.

Lunch at our house usually involves only me and one of my littles. Thus, the idea of making a big mess, and making a meal for just me never sounds good. I started skipping meals, but that is never smart. So I decided to make an assortment of burritos to keep in the freezer. That way I could pull one or more out at a time. Pop in the oven. And have a relatively healthy meal in a matter of minutes with almost no mess. This is one of our favorites. Another delicious recipe with an international flavor to have in your rotation is my chicken marsala.
BBQ Chicken Burritos
When I make these BBQ Chicken Burritos, I usually make A TON! I start by preparing all of the ingredients. I learned a fun trick for getting quickly shredded chicken that really cuts down the work, especially when cooking in bulk. Simply cook your chicken (you can boil it with some seasonings, or cook however you prefer), then put warm chicken into a Kitchen Aid mixer with the hook attachment, and mix at a 6-8 speed for about a minute. I then add in my sauce, and turn it back on for a second, so that the chicken is evenly coated.
Once all my ingredients for BBQ Chicken Burritos are cooked and ready to go I make it really fast and easy by laying out pieces of foil, and a tortilla on each piece, then I add ingredients assembly line style. Then roll, wrap in the foil, and place in freezer bags to be used one, two, five, or twenty at a time, as you need.
One of the things I really love about BBQ Chicken Burritos is you can put whatever you want in them. I use a homemade BBQ sauce, but when I am in a hurry, I can just use a store bottled option. When I make burritos for the whole family I use the recipe listed above. If it is just for me, I often add in cilantro lime rice, grilled peppers, grilled onions, and more.
Then I always top with lots of yummy goodness: salsa, guacamole, sour cream, fresh tomatoes, etc.

BBQ Chicken Burritos
Ingredients
- 1 chicken breast cooked and shredded
- 1/2 c BBQ sauce choose your favorite
- 1.5 cup shredded mixed blend cheese
- 1 can black beans drained
- 1.5 cup corn kernels frozen, canned, or fresh
- 10 to rtillas flour or wheat
Instructions
- Cook and shred your chicken.
- Coat chicken in favorite BBQ sauce
- Assemble burrito using cheese, beans, corn, and chicken
- Wrap the burrito in foil.
- Freeze or bake.
- Bake at 350 for 20 mins if fresh, or 25 from frozen.
- If you don't want the tortillas to be crispy, cover in foil before baking
