Back-to-school season is here, and if you’re anything like me, mornings just got a whole lot busier! Between getting the kids ready and packing lunches, breakfast can easily fall by the wayside. That’s where baked egg bites come in—quick, easy, and delicious, these make-ahead breakfast bites are a lifesaver for busy mornings. Whether you’re a parent looking to simplify the morning rush or just want a nutritious grab-and-go option, baked egg bites are the perfect solution.

  • Mix-ins of choice (see below for ideas, you need about 2 cups of mix-ins to fill the 24 tins)
  • Cooking spray

Instructions:

  • Preheat Your Oven: Start by preheating your oven to 375°F (190°C). Spray 2 – 12-cup muffin tins generously with cooking spray to prevent sticking.
  • Prepare the Egg Mixture: In a large bowl, whisk together the eggs and cottage cheese. Season with salt and pepper to taste. This mixture will be the base of your egg bites. You can also add in other seasonings or fresh herbs. 
  • Add Mix-Ins: Prepare your chosen mix-ins by sautéing any veggies you want to use. This step helps to release extra moisture and enhances the flavors. Add your prepared mix-ins (meats, cheeses, veggies) to the bottom of each muffin cup.
  • Fill the Muffin Cups: Pour the egg mixture over the mix-ins in each muffin cup, filling them about 3/4 full. Sprinkle shredded cheese on top of each cup.
  • Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and slightly golden on top. A toothpick inserted into the center should come out clean.
  • Cool and Store: Once baked, allow the egg bites to cool slightly before removing them from the muffin tin. Store them in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
