Why are dips so good?
I love creamy dips like Spinach Artichoke, and good old dips like Southwest Guacamole, but this dip…this salsa…this whatever you want to call it rivals them all!
Just remember, if you bring it to a party, be prepared to be the star.
So here’s the deal with this dip: My sister recently had a baby, and so as those things go, we had a party.
And her in-laws brought an amazing cowboy caviar type dip, very similar to what you are seeing here.
It was definitely everyone’s favorite, and I ate it by the chip-full, then spooned it over my salad too.
So I asked for the recipe. And she said, “It is just all those yummy things and some sweet vinaigrette dumped over the top.”
Sounds simple enough right?
Well it would be, except they live in a small town and shop at a small local store.
And my big old chain store does not carry the sweet vinaigrette dressing she recommended. I can’t find it.
And I have been wanting the bean salsa ever since. So I bought tons of different vinaigrette dressings to try and recreate the flavor.
Total waste.
Then I realized I could just make my own. So I did. And while it is not exactly the same, I dare to say it might actually be better.
What you need to make bean salsa
All the ingredients to make an authentic bean salsa that everyone is going to love.
Blend and mix all these together and you have one amazing dip!
- grape tomatoes
- jalapeno
- yellow onion
- Chopped cilantro
- Black beans
- Navy beans
- Corn kernels
- Red sweet mini peppers
- Avocado
What you need to make honey lime vinaigrette
You do not want to skimp or skip any part of this vinaigrette!
This is what is the show stopper here.
It sets this bean salsa above the rest!
- Olive oil
- Honey
- Limes
- Red wine vinegar
- Salt
- Black pepper
How do you make bean salsa?
Eazy Peazy salsa that will come together effortlessly and beautifully.
- Drain and rinse beans
- Drain corn
- Chop: Quarter tomatoes, chop jalapenos and sweet mini peppers, chunk avocado, and finely chop cilantro
- Mix all Honey Lime Vinaigrette ingredients together in a small bowl, and whisk until incorporated.
- Combine: In a large bowl, combine chopped veggies, rinsed and drained beans, and drained corn kernels
- Pour vinaigrette over top
- Stir until everything is mixed up nicely
- Refrigerate 30 minutes to let flavors mingle
- Enjoy with chips, pita slices, on top of a salad, or with a spoon!
Make it your own:
Of course you can adjust the ingredients to your liking.
You can add more avocado, or leave it out. You could swap in different beans or just use black beans.
Basically just change it to your liking. Or make it as described and find perfection in your mouth. (Too braggy? Oh well)
What to serve bean salsa with
I served it with Scoops chips because they are the hubs fave.
But it can also be served over salad, in a burrito, with grilled chicken or prawns, or just eat it with a spoon.
It is not beneath me to do this.

Ingredients
- 2-3 cups grape tomatoes quartered
- 1 jalapeno seeds removed, chopped
- 1/2 yellow onion
- 1/2 cup chopped cilantro
- 1 15 ounce can black beans
- 1 15 ounce can pinto beans
- 1 15 ounce can navy beans
- 1 15 ounce can corn kernels
- 2 red sweet mini peppers
- 1 avocado chunked
Honey Lime Vinaigrette
- 2 Tbs olive oil
- 2 Tbs honey
- 2 limes juiced
- 1 Tbs red wine vinegar
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Drain and rinse beans
