If there is one thing in life we need more of it is easy dinners. Dinners with minimal prep time, and even less clean up time. And this my friends is that kind of recipe. This foil packet kielbasa recipe is seriously easy to make, has great fresh flavors, and the clean up is as easy as it gets. Plus you can cook it several different ways, in the oven, on a grill, or even as a hobo dinner in the campfire, making it a versatile and family pleasing meal!
One of my favorite parts of this recipe is that there are very few dishes involved, and super simple clean up.
The key to the easy clean up is the aluminum foil. I used Handi Foil, 12in wide 85 Foot long roll, which you can get at Walmart and walmart.com. By wrapping the veggies and kielbasa in foil you can cook them on the grill, or in the oven, and then just toss the foil when done. Handi Foil is great for this because it is a heavier duty foil. This means it won’t rip or tear with the weight of the food. And it holds up well on the grill without the food burning. It is thick and strong, and makes this recipe clean up a breeze.
I bought pre-sliced mushrooms, and so I only had to slice the squash and the kielbasa. Then, I toss it all together in a bowl with some seasoning and olive oil. Next, I divide it onto the foil and cook. However, skip one step, and save even more dishes, by simply layering ingredients directly onto the foil and drizzling olive oil and seasoning over the top! I tried it both ways (drizzled method pictured below), and the flavor was great regardless. If you want to dirty the extra dish, then don’t.
Another great part about this is you can customize it to your flavor preferences. Add in other veggies, onions, or subtract things you don’t like. The method is still the same, and your food should cook and steam in Handi foil, or like foil, without burning!
So whether you are looking for a meal for a campout to cook in the campfire, want something you can prep ahead then throw in the oven for a busy night, or want to grill out in the backyard, this recipe has got you covered. It is simple, delicious, and full of flavor, not to mention totally customizable. .

Can you add little yellow or red potatoes quartered or halved?
Rachael says
Yes, but they cook slower, so maybe cover in water and microwave them for a few minutes first.
