I know I do and each and every member of my family and friends. Potatoes are so versatile that sometimes I wonder how would the world be without them. It’d be so boring right?

Whenever I prepare these garlic parmesan roasted potatoes for a family dinner or gathering, there is always sort of a competition as to who would consume the most. You can never get enough of these. That seasoned golden brown crust on the outside with a soft texture on the inside is so pleasing to the palate. Which is why it is absolutely no wonder that roasted potatoes are so popular.

Garlic Parmesan Roasted Potatoes

This is a very quick and easy recipe. Quick in the sense, that it hardly takes 15 min for preparing while the rest of the job is taken care of by your oven.

This recipe primarily involves two steps. First, mix the parmesan cheese with bread crumbs, garlic, paprika, parsley, salt, and pepper. Drizzle some oil in a baking pan and evenly spread the prepared cheese mixture. And secondly, place the halved potatoes facing cut side down and bake them to perfection in the preheated oven. It’s that simple!

These crusted potatoes will be a perfect appetizer with yogurt or sour cream dipping sauce. Or, you can also serve them as a side to dishes like vegetable pasta salad, roasted whole chicken or this pasta bake.

Helpful tips:

  1. To make these delicious crusted potatoes use small or petite red potatoes.  It takes relatively less time to cook smaller sized potatoes and reduces the risk of burning the garlic parmesan mix.
  2. I find red potatoes develop an off-flavor in just a few days. Therefore, make sure to use them soon enough after buying.

Ingredients

  • 1 1/2 lb small red potatoes halved
  • 2-3 tbsp olive oil

Parmesan Mix

  • 1/2 cup parmesan cheese
  • 2 tbsp bread crumbs
  • 1 tbsp minced fresh garlic
  • 1 tsp paprika
  • 2 tbsp finely chopped parsley
  • salt and pepper

Instructions

  • Preheat oven at 400F.
  • In a small mixing bowl combine parmesan cheese, bread crumbs, garlic, paprika, parsley, salt and pepper. Mix well.
  • Drizzle oil in a baking tray lined with a silicone baking mat These mats make clean up so quick and easy!
  • Then evenly spread the parmesan mix. Reserve some mix.
  • Now place potatoes facing cut side down
  • Sprinkle remaining parmesan mix on top of the potatoes
  • Bake in the preheated oven for 25-30 min.
  • Optionally, add more fresh chopped parsley to garnish.
  • Serve warm with yogurt or sour cream.

Notes

Use parmesan cheese (store bought or freshly grated) with sand like texture for this recipe. For freshly grated parmesan cheese I use a very fine grater (microplane).
