The sweet potatoes are covered in maple butter that is so delicious you may just want to eat it on its own.
Scalloped Sweet Potatoes with Maple Butter has some great sweetness from the maple syrup paired with the savoriness of the butter, sweet potatoes, and rosemary. It even has a little heat from some cayenne to cut the sweetness!
The amount in the recipe gives it enough to give some heat without the spice. If you’re looking for some sweet and spicy, add a little bit more cayenne!
I used a mandoline slicer to cut these thin in no time at all. Use the guard that comes with it to make sure you avoid cutting your fingers! You can definitely use a knife if you don’t have one! It’s just easier to cut them evenly with a mandoline.

I cut them to be about 1/8″ thin which I found to be a good thickness for really tender potatoes. With that thickness and 30 minutes in the oven, Scalloped Sweet Potatoes with Maple Butter be fork tender and melt in your mouth! If you like crunchier potatoes, try cutting them thicker or cutting the time that you have them in the oven.
If you have an oval or circle dish, try lining up the slices of sweet potatoes in a circle to give an even better presentation!

Scalloped Sweet Potatoes with Maple Butter
Ingredients
- 2 sweet potatoes sliced thin
- 1/3 cup maple syrup
- 1/3 cup butter
- 1/2 tsp dried rosemary
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 425F.
- Peel and slice sweet potatoes. Use a mandolin slicer for thin, even slices
- Spray a casserole dish with non-stick spray. Add in sliced sweet potatoes.
- In a small sauce pan, melt maple syrup, butter, rosemary, cayenne pepper, salt, and pepper. Mix well.
- Once melted, pour over sweet potatoes. Stir to thoroughly coat. Cover with foil and bake 30 minutes. For crunchier potatoes, cook 20-25 minutes.
- Remove foil and broil for 5 minutes to brown. Serve warm and enjoy!

I have been making scalloped sweet potatoes for Thanksgiving and church suppers every year and I do it a little different every year and get rave reviews. I always use 3 different colored sweet potatoes and layer them in a glass casserole. Last year I did similar dish with maple syrup and butter less the cayenne. I usually slice the potatoes about a 1/4 inch. This year, I used the mandolin and layered 9 rows of 3 different colors with the maple syrup between and I tripled the recipe so it took about 3 times the length of time. I also sliced the casserole in 1.5″ squares just before serving so the different layers could be seen. I think this was the best presentation and taste of all the years I have been tweeking this dish. If there are any leftovers, it is great with bacon for breakfast or crumbled bacon for another side dish.
