I grew up in a family that was borderline vegetarian, and my husband grew up in a meat and potatoes family. Personally I think I could go either way. I love a good steak, but am often just as happy eating a salad.
This potato, pepper, and sausage bake is for the meat and potato lovers in your life. It boasts robust flavors, and hearty, filling ingredients. Plus you can customize it by adding in extra vegetables of your choice!
You will find it is a great side, or can stand on its own as a meal.
Potato, Pepper, and Sausage Bake
You guys, this potato, pepper, and sausage bake takes a little time, but it really is super eazy peazy to make. Just start by dicing up your potatoes, onions, sweet peppers, and sausage. You can use whatever type of sausage you want, and you can peel the potatoes, or leave them skin on. (I prefer skin on since I am lazy). Then add the seasonings and oil together in a large bowl, and toss the potatoes and onions in it. Stir until well coated. Then go ahead and spread out on a baking sheet, and bake at 500 F for 30 mins, stirring every 10 minutes. the potatoes should get nice and crisp on the outside. At the end of 30 mins, add in your sausage and peppers, and bake for another 10-15 mins. Then remove from oven, and enjoy or cool and freeze for later use!
When I serve potato, pepper, and sausage bake to my kids, it is usually with a helping of ketchup for dipping, so feel free to add some hot sauce, or something to spice it up. I find this to be a great breakfast hash, as well as side dish. I love it with a runny egg and some crunchy toast!

Potato, Pepper, and Sausage Bake
Ingredients
- 10 medium red potatoes diced
- 10-15 mini sweet peppers
- 1 medium onion diced
- 1 Kielbasa or Sausage of choice
- 1/2 cup olive oil
- 2 Tbs lemon juice
- 3 Tbs Rosemary Garlic seasoning
Instructions
- Wash, peel (optional), and dice potatoes
- Cut up sweet peppers, and onions
- Slice Kielbasa into rounds
- Mix oil, lemon juice, and rosemary garlic seasoning in large bowl
- Add potatoes and onions, coat thoroughly
- Spoon into baking sheet or baking dish
- Bake at 500 for 30 mins, stirring every 10 mins
- After 30 mins, add sausage and sweet peppers
- Bake at 500 for 15 mins
- Serve immediately or cool and freeze
- To eat from frozen, thaw, reheat at 450 for 15 mins

Apparently you are not too familiar with Kielbasa. What is “1 Kielbasa or Sausage of choice”? 1/1 lb, 1 lb, 3 lb? Fresh or cooked in a package?

Excellent! Added two fresh jalapeños with peppers, then mushrooms the last 10 minutes. I think 500 for 45 minutes is too much, so I did 450 for 40. So good!
