Smoked Salmon Black Bean Egg Rolls

Crispy egg roll, sharp and creamy goat cheese, smoked salmon, and black beans make these egg rolls both easy and sophisticated, and perfect for entertaining.

smoked salmon and black bean egg rolls #nasoyaYou may have noticed how much I love egg rolls. I love pizza egg rolls. I love shrimp and veggie egg rolls. I love dipping sauces for my egg rolls.  There is just something so satisfying about a quickly made egg roll filled with goodness. And these salmon and black bean egg rolls are no exception.

fried salmon egg rollsMy husband and I are adamant about our weekly date nights. In my opinion they are what has kept us married, and what have made our married life so much fun. We do our very best to never miss a date night, and while they sometimes get pretty predictable, they are always good for our relationship. So why does this matter and what does it have to do with smoked salmon egg rolls? Well a few months ago we were out on a date at one of our favorite Chinese restaurants, and one of their specials was a salmon egg roll. We decided to try it, and they were pretty good. But not as good as I hoped. I immediately started thinking about how I could make them better. I mean there was so much potential in the idea. I loved the combo of the black beans and the salmon, but I wanted more. So I thought some creamy goat cheese with its distinctive flavor, and using a smoked salmon would put those okay egg rolls over the top.

I was right!!!

preparing egg rollsThese really are so simple. you just need egg roll wraps (Nasoya are my favorite), some goat cheese (I used an herbed goat cheese), and smoked salmon. You roll them up, bake them or fry them, and enjoy! You could dip them in a sauce. I think a lemon aioli would rock, but had no time to make one, and they were good without it.

uncooked salmon egg rollsI like to fry my egg rolls because it is so fast, like seriously 3 minutes tops. But baking is healthier and just as easy. Just heat the oven to 400 degrees F and spray with a cooking spray, then bake for 10-12 minutes.

Ingredients

  • 1 package Nasoya egg roll wraps You won't use the whole package
  • 1/2 cup herbed goat cheese
  • 1/2 cup black beans
  • 1/2 cup smoked salmon cut into strips

Instructions

  • Preheat fryer oil to 350 degrees F or oven to 400 degrees F
  • Lay out your egg roll wrappers, and place even amounts of black beans, salmon, and goat cheese on center.
  • Use a little water to moisten edges of wrappers, and wrap. *
  • If frying, put in fryer basket and fry until golden brown, about 3-4 minutes.
  • If baking, spray with cooking spray and bake at 400 degrees for 10-12 minutes until golden brown.
  • Enjoy!

* There are great directions for wrapping egg rolls on the back of the Nasoya package.
