Caprese Stuffed Chicken Breast:

Juicy chicken stuffed with tomatoes, mozzarella sticks, and basil, and topped with a balsamic glaze. All the flavors you love of caprese in a stuffed chicken breast.

When it comes to a hearty, delicious, and appetizing dinner, this caprese stuffed chicken has it all. It has fresh bold flavors, but is ridiculously easy to make because it is air fried. It can be baked as well. Either way, you are going to love this tasty meal.

Serve with smashed potatoes, roasted carrots, and a green salad for a complete meal!

Chicken is a low cost, and versatile protein, which makes it one of the go-to options for many households for dinners. But it can also get boring if you don’t try new things. And when it comes to new things, stuffing chicken breasts with other things is the way to go. These cheesy potato stuffed chicken breasts, for example are killer. The fact is, chicken makes a great vehicle for stuffing with something. And these caprese stuffed chicken breasts are very tasty!

What is stuffed chicken?

Stuffed chicken breast recipes all have one thing in common, the chicken has something inside it. For this caprese chicken it is tomatoes, basil, and mozzarella. And for a fun twist, I used mozzarella sticks. 

I am obsessed! Totally and completely obsessed with this tasty Caprese Stuffed Chicken cooked in the air fryer!  It doesn’t get easier or tastier than this. This juicy chicken breast combined with Farm Rich Mozzarella Sticks, fresh tomato slices, and basil, then drizzled with balsamic glaze makes for a fresh and flavorful meal that comes together in under 30 minutes.

Did I mention it is air fried? This means a crispy beautifully golden exterior, and juicy interior. 

How does an Air Fryer work?

An air fryer is a great way to cook stuffed chicken because it keeps the interior super juicy while producing a crispy exterior. I love that, and it is easier than pan searing and then baking.

The air fryer using convection technology, where air is circulated with a fan and evaporates the moisture from the exterior of the food, and makes it crispy. With just a little bit of oil or natural fat, you get naturally crispy foods without adding the calories of deep frying.

I loved making this chicken caprese with it because I got the crunch, the juiciness, and obviosuly a perfectly cooked chicken breast.

The trick is making sure the chicken has space on all sides for the air to circulate. So the only down side to making this tasty stuffed chicken breast recipe in an air fryer is you can only cook 2 or so at a time, as you do not want to over-crowd.

What goes with caprese chicken?

Chicken caprese or caprese stuffed chicken goes with just about anything. You could serve it with a great spaghetti and homemade sauce. Or you could serve it on its own with a salad.

Caprese chicken is an excellent main to serve with something like this greek cucumber salad or with a green salad like this Spinach Salad.

How long do you bake stuffed chicken breasts in the oven?

For this recipe I opted to use an air fryer to get the crispy outside and a juicy inside, but if you wanted to bake stuffed chicken breasts in the oven, the best way to do that is to:
  1. Sear the outside in a skillet, for 3-4 minutes a side. Use an oven proof skillet
  2.  Move from stove top to oven, and bake at 400 degrees until internal temp reaches 165 degrees. This usually takes 20 minutes or so. But it really depends on the thickness of the chicken, which is why I am a huge proponent of having an instant read meat thermometer in your kitchen. They are usually under $20 and mean never having dry, overdone, chicken again.
  3. Rest your chicken. This lets the juices redistribute and gives you juicier results.

When it comes to a killer caprese chicken recipe, I have to say I like air fryer chicken, but don’t worry I included the baking instructions below as well. Both are delicious.

How do I cook pre-stuffed chicken breast?

In a nutshell, you cook stuffed chicken breasts by air frying them for 20 minutes at 370 degrees.

But you can also pan sear them, then cover and turn them down to a low heat and continue to cook stove top.

Or you can put your stuffed chicken breasts into the oven. It depends on the stuffed chicken recipes you use, and your preferred method.

Tools Needed for Caprese Stuffed Chicken:

Air Fryer: This is a great tool to make the exterior of the chicken crispy and in the interior juicy.

Oven Proof Skillet: An oven proof skillet makes for a quick and clean trip from the stove top right into your oven.

Caprese Stuffed Chicken

Deliciously juicy stuffed chicken breasts, filled with mozzarella sticks, tomatoes, and basil leaves. Then drizzled with balsamic glaze.

Ingredients

  • 2 chicken breasts
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried basil
  • 1 roma tomato
  • 6 mozzarella sticks
  • 4 basil leaves
  • 1 Tbsp Balsamic glaze

Instructions

  • Using a sharp knife, butterfly the chicken breasts so they are open, but not sliced all the way through, creating a pocket for the filling to go. Set aside
  • Mix together the salt, pepper, and dried basil, and generously season the exterior of the chicken. 
  • Wash and slice the roma tomato, and place 2-3 pieces on the inside part of the chicken.
  • Add 3 mozzarella sticks on top of the tomatoes. 
  • Fold the chicken over the filling, and use toothpicks to secure it in place. 

Air Fryer

  • Place chicken breast in the air fryer basket and set to 370 degrees for 20 minutes. 
    When finished, use a meat thermometer and take a temperature read to insure internal temp of chicken is at 165 degrees when finished cooking. If not, return to air fryer for 3-5 more minutes. 
  • Remove from air fryer, and remove the toothpicks. Place two fresh basil leaves inside the chicken, on top of the tomatoes. Drizzle chicken breast with balsamic glaze, and additional fresh basil and serve. 

Baking

  • Preheat oven to 400 degrees. 
  • In a large oven-proof skillet, over medium-high heat, melt 1 Tbs of butter or add 1 Tbs of olive oil. Sear chicken 3-4 minutes per side, until golden brown. 
  • Place skillet in the preheated oven, and bake 17-20 minutes, until internal temperature reads 165 degrees. 
  • Remove from oven, and remove toothpicks. Then place 2 fresh basil leaves inside each chicken breast, drizzle with balsamic, and garnish with more fresh basil if desired. 
  • Serve and enjoy.
