Picky Eaters
If you are following me on Instagram or really any social media, you probably know that I love to travel with my family. While we have enjoyed traveling, one of the challenges I have run into is getting my son to eat when we are in a foreign country. He doesn’t often want to eat foods he is unfamiliar with. He is already a picky eater, so asking him to try something unfamiliar is a total no. The problem is that when I am in a new place, the last thing I want to do is eat at McDonald’s. But I also don’t want my kid to starve. I have had to look for ways to help him get food he will like, and the nutrients he needs on-the-go. And finding this in a way that is also convenient enough to take on trips with us.
This usually involves packing some high nutrient snacking options. Scoping out restaurant menus in advance. And staying at an Airbnb or lodging with a kitchen so I can at least prepare breakfast on my own. But I also recently started to bring something to supplement his diet. To do this currently, I am really loving Pediasure Sidekicks. They help me know my son is getting the nutrients he needs, while being a great snack, or part of a meal.
I can mix Pediasure Sidekicks into waffles for a more nutrient dense breakfast, or I can have my son drink it as is, or mix it in a smoothie if needed. This has proven to be very helpful when we are somewhere that our typical ingredients are hard to come by.
I sometimes think it would be really nice to have a kid that just eats everything, but that is not my reality, and it has forced me to get somewhat creative in my approach to getting him what he needs. Classic Waffles + PediaSure SideKicks
Ingredients
- 2 cups all purpose flour
- 1 Tbs white granulated sugar
- 4 tsp baking powder
- 3/4 tsp salt
- 2 large eggs
- 1/2 cup warm milk
- 1 bottle PediaSure SideKicks Vanilla Shake or sub 1 cup milk, warmed
- 6 Tbs melted butter
- 1 tsp vanilla extract
Instructions
- Preheat waffle iron . I love the flip waffle irons because they make perfect evenly cooked waffles every time!
- In a large bowl whisk together flour, sugar, baking powder, and salt
- Add in eggs, milk, PediSure SideKicks, melted butter, and vanilla, whisk until smooth
- Put 3/4 cup batter into a belgium waffle iron, and cook until browned on outside and cooked through.
