You guys! Banana bread is one of my favorites, and I have a lot of recipes for it. The most popular one on my site is this one, and the second most popular is the Cream Cheese Banana Bread. I love the cream cheese filling, but sometimes I just want plain, simple, easy to make, no machine needed banana bread. I mean seriously, this is SUPER SIMPLE BANANA BREAD!
I usually double the batch and do one big loaf (pictured) and a few mini loaves of Super Simple Banana Bread which we devour, or give as gifts. The last time I made this banana bread I used a muffin tin and made it into muffins (which bake up a lot quicker than the loaf), and my sweet kiddos had them for quick grab and go breakfast options, and for after school snacks.
I can think of a million ways to enjoy an Easy Banana Bread! How about making this Super Simple Banana Bread recipe into easy banana bread muffins? I mean the possibilities are endless.
Super Simple Banana Bread Made Healthier:
If you want to make this recipe healthier there are a few things you can do.
- Grind oats: You can use your blender to grind up some old fashioned oats, and sub out half the flour for oat flour in this banana bread recipe.
- Applesauce: One healthy alternative for this easy banana bread is to use some applesauce instead of the butter, although this will change the flavor.
- Less sugar: You can definitely cut down on the sugar in this recipe, but you will want to keep some in. I have made banana bread with about half the mentioned sugar and it is great. But base this on the sweetness of your bananas.
Simple Banana Bread Mixins:
I find that I am pretty plain Jane when it comes to my banana bread. I try to use a really good vanilla. This is my favorite vanilla of all time. I do not love adding nuts, or chocolate chips. But my kids do. They love when I add chocolate chips. What is your favorite way to eat banana bread? Here are a few fun options:
- Chocolate Chips
- Walnuts
- Berries
- Streusel topped
- Cream cheese filling
- Flavored chips: butterscotch, peanut butter, vanilla
I love a nice pat of butter on mine, and prefer eating it fresh out of the oven. It is hard for me to wait for it to cool sometimes. But I have found that the flavors tend to intensify if you wait to eat it until it is cooled, or a day or so later. No matter how you like your banana bread, might I suggest trying this Super Simple Banana Bread recipe as it is really quite delicious!
Super Simple Banana Bread Tools:
- Mixing Bowl: All you need to make this recipe is a mixing bowl and wire whisk. It really is that easy.
- Loaf Pan: My favorite loaf pan for good release of banana bread is Wilton brand. You can check out some full size options here or try the mini sized loaf pans for fun gifts! Or check out the gorgeous Rachael Ray loaf pans. I want the blue one!
- Cooling Rack: Letting the banana bread cool will help to intensify the flavors.
Enjoy!

Oh my goodness!!! First of all, let me tell you that I NEVER write reviews, but this recipe had a few mixed reviews and I thought it was necessary to give you kudos! This is amazing! I lost my all time favorite banana bread recipe and haven’t been able to find it anywhere, after scouring the web for forever I stumbled upon yours! I was looking for something simple, low sugar (some recipes call for 3 cups!!), and this was perfect! I followed the recipe to a T, but did mine as muffins and they came out perfect in 17 mins. (Everyone’s oven is a tad different though) Thank you for sharing!
Rachael says
Thank you Alyssa, We LOVE this recipe and use it all the time, I am always bummed when it doesn’t work out for people, so I am thrilled to hear it worked out for you, Thanks for taking the time to let me know.

This recipe is beyond perfect! I can freeze and eat it longer too. Plus I can make it with 2 toddlers running around. Thank you! What I want to know though is can you can zucchini? Do you have any zucchini bread recipes that a this easy? Maybe any carrot or zucchini bread recipes? I also add chocolate chips to mine…..it’s so amazing!

This looks scrumptious! It’s the only banana bread recipe I will try. But is there a substitute for baking soda in this recipe, or can you omit it? Please help! Thank you.

Since I pinned this a couple of months ago, I’ve made it at least six times. My family LOVES it! I’ve never been a huge fan of banana bread, and I love this recipe too! Thanks so much for sharing it! I started making it with Namaste Foods gluten free flour blend and it’s still just as delicious, in case any of your readers are GF. The next 50 minutes can’t go by fast enough 🙂
Rachael says
Oh thank you so much for your very kind comment. I appreciate it, and we love that recipe too! Thanks for the Gluten Free tip! Have a wonderful day.

I am so happy I made this! What an absolutely delicious, moist, flavorful banana bread. I was looking for a basic banana bread recipe to use some overripe bananas and this went on my “Tried & True” best recipes file on pinterest! Thank you 🙂

Made this banana bread tonight and it was great the only problem I had was there was like bits on banana in it that either didn’t mix with or didn’t cook well cuz after I cooled in and cut it there was slimy banana pieces any suggestions
Rachael says
Mush your bananas up a little better with your fork next time. You could use a hand mixer to do this if you want. I prefer to just use a fork because I like the simplicity. I usually just have my kids do it so it is almost soup. Hahaha. They are enthusiastic. And then just be sure when you do mix the batter that it is well incorporated without being over-mixed.

Hi-So excited to try this! One question: salted or unsalted butter?
Rachael says
I use salted.
Dana says
This banana bread is fantastic! Thank you for sharing your recipe. I took one of the suggestions and added a couple pinches of cinnamon. Spot on! I find myself also purposely letting some bananas get over ripe just so I can make this bread.
Rachael says

hello, i made this banana bread and i was very excited. for some reason it tastes salty and i followed the recipe exactly. i’m very disappointed, but i guess i will just have to try it again
Rachael says
Danielle, I have no idea what to say, I have literally made this recipe thousands of times, as have many of my readers. I would say to try cutting down the salt when you make it again just to be sure. Thanks! Sorry it did not turn out for you.
Valerie Rivera says
This is a GREAT banana bread recipe. I’ve made it several times for my family, and everyone loves it. I’m not a great baker by any means, and even beginners can make it. Fresh, warm out of the oven, just a smidge of butter on top…..yumm
Rachael says
Thank you! We love it too.
Lisa Gavin says
I made this today. It was excellent; everyone loved it! I had 4 bananas to use and came out perfect!
Rachael says
I am so glad to hear it! Thank you!

Just made these. They are d’lish! I used 1/2 cup of sugar, made them in a muffin tin, and baked them for 20 minutes. There is only one problem…I have a few hours until my kids are home from school and I’m not sure if there will be anything left when they get here. Thank you!!!
Joy Brown says
if I used bananas that have been mashed and frozen, how many cups should I use?
Rachael says
About a cup to a cup and a half.
