You guys! Banana bread is one of my favorites, and I have a lot of recipes for it. The most popular one on my site is this one, and the second most popular is the Cream Cheese Banana Bread. I love the cream cheese filling, but sometimes I just want plain, simple, easy to make, no machine needed banana bread. I mean seriously, this is SUPER SIMPLE BANANA BREAD!
I usually double the batch and do one big loaf (pictured) and a few mini loaves of Super Simple Banana Bread which we devour, or give as gifts. The last time I made this banana bread I used a muffin tin and made it into muffins (which bake up a lot quicker than the loaf), and my sweet kiddos had them for quick grab and go breakfast options, and for after school snacks.
I can think of a million ways to enjoy an Easy Banana Bread! How about making this Super Simple Banana Bread recipe into easy banana bread muffins? I mean the possibilities are endless.
Super Simple Banana Bread Made Healthier:
If you want to make this recipe healthier there are a few things you can do.
- Grind oats: You can use your blender to grind up some old fashioned oats, and sub out half the flour for oat flour in this banana bread recipe.
- Applesauce: One healthy alternative for this easy banana bread is to use some applesauce instead of the butter, although this will change the flavor.
- Less sugar: You can definitely cut down on the sugar in this recipe, but you will want to keep some in. I have made banana bread with about half the mentioned sugar and it is great. But base this on the sweetness of your bananas.
Simple Banana Bread Mixins:
I find that I am pretty plain Jane when it comes to my banana bread. I try to use a really good vanilla. This is my favorite vanilla of all time. I do not love adding nuts, or chocolate chips. But my kids do. They love when I add chocolate chips. What is your favorite way to eat banana bread? Here are a few fun options:
- Chocolate Chips
- Walnuts
- Berries
- Streusel topped
- Cream cheese filling
- Flavored chips: butterscotch, peanut butter, vanilla
I love a nice pat of butter on mine, and prefer eating it fresh out of the oven. It is hard for me to wait for it to cool sometimes. But I have found that the flavors tend to intensify if you wait to eat it until it is cooled, or a day or so later. No matter how you like your banana bread, might I suggest trying this Super Simple Banana Bread recipe as it is really quite delicious!
Super Simple Banana Bread Tools:
- Mixing Bowl: All you need to make this recipe is a mixing bowl and wire whisk. It really is that easy.
- Loaf Pan: My favorite loaf pan for good release of banana bread is Wilton brand. You can check out some full size options here or try the mini sized loaf pans for fun gifts! Or check out the gorgeous Rachael Ray loaf pans. I want the blue one!
- Cooling Rack: Letting the banana bread cool will help to intensify the flavors.
Enjoy!

Ok I just made this recipe and it is baking as I type here. I am slightly concerned because it was a lot thicker then most banana bread recipes i have used. Is this “normal” for this recipe?
Kelsey says
Made this today and they turned out great. I doubled the recipe and it made four mini-loafs (6″x3.5″x2″). Took approximately 35 minutes in my gas oven (usually cooks things more quickly that previous ovens I’ve owned). I added chocolate chips to one of the four loaves and it took a few extra minutes to cook through.
Great basic banana bread recipe. Thanks!

Thank you Kelsey, I am so glad to hear about your success.

I love this banana bread recipe ! How would I modify this recipe to make banana muffins?
Thank you,

Rachael says
Hi Andrea,
I would only bake for 35 minutes, in muffin tins, as for the recipe, don’t change a thing.

Mad mama says
Worst thing I’ve ever eaten, I made everything exactly as written. I’m wondering if baking soda was a misprint for baking powder because it tastes like chemicals like a bc powder or something.im very upset that I wasted all my ingredients on this.
Rachael says
I am sorry you had a bad experience, but you will see this recipe works for a ton of people! There are so many differences in ingredients, ovens, etc. Maybe your baking soda went bad. I don’t know what to say. Were your bananas too ripe/rotten? I would love to help you trouble shoot this. Hopefully you will find something else that you like better on my site.

Awesome recipe, Thank you so much for sharing! Easy, and what better way to utilize brown bananas? No more throwing them away.
Thank You!
Rachael says
Sandy, you are so welcome. Thank you for taking time to comment. It is definitely our go to. And I shouldn’t tell you how often I buy bananas with the intention being to let them brown so I can make this!
Dana says

I just made these. Didn’t change a thing and they came out amazing! I made muffins instead and they cooked in 20mins and they were super moist. I’m going to save this recipe and learn by heart and make it every Sunday! Thank you for sharing such a quick and simple recipe.
Jackie says
Used your recipe but added just a teaspoon of buttermilk in mini loaves and they were super moist and delicious. Everyone loved them. Making another batch for Christmas gifts.
Rachael says
Oh Jackie, that sounds awesome, now I want to make it that way. yum! I bet whoever receives those gifts will love them.
Heather McAuley says
I made this tonight with some very overripe bananas. I halved the sugar, and used half dark brown sugar and half white sugar. It was devine. Thank you!
Rachael says
That sounds like some great substitutions. So glad you enjoyed it.

I have been looking on pinterest at all the banana bread and they all look the same-what makes one better than the other except for adding yogurt or cream cheese-please help me understand since I am not a baker. Made on using margarine but next time would use butter
