Oh man, you guys, summer is going to be here before we even blink, and while in so many ways I am ready, ready, ready, in other ways I am just not.
So I have to tell you what happened.
Being a food blogger, one of the things I really love is attending blogging conferences. They are a chance to get together with other bloggers, learn, network, and have fun.
I have some blogging idols, and several of them teamed up and are putting on a conference at the end of May.
So of course, I had to go to it. So without even looking at the dates or anything else, I booked it. Bought. Paid for. And the works.
Then I figured I better find sitters and then like, so I looked at the dates, and guess what?
It is over my daughter’s birthday, during graduation (my husband’s busy season at work), and ummm, school is still in.
See I thought my kids would be out of school by then, so I asked my mom to watch them. Well, they aren’t.
Bahaha, so now mom of the year here is not just missing her daughter’s birthday, but making her kids miss part of the last week of school, ya know… the fun week!
Busted!
My kids are devastated. So I am trying to figure it out. Anyway, for me, this was all caused by the fact that as a blogger holidays, breaks, etc. all come early.
If I want to post a summer recipe, I can’t wait til summer.
I have to test it. Make it. Photograph it. And post it long before what it is for. Or in some cases, the day before because I procrastinate like that.
Anyway, I had summer on the brain, and so made a few assumptions. And you know what that means.
So if you are anything like me, and are jumping the gun to summer, then you definitely will want this potato salad in your arsenal. It is simple, and oh so tasty.
What you need to make classic mustard potato salad
- Russet potatoes: peeled and diced into 1 1/2 centimeter cubes
- Eggs: hard boiled eggs. Try this Instant Pot Hard Boiled Eggs method.
- Sweet onion: finely diced
- Sweet relish
- Salt and pepper to taste
- Mayo
- Heinz Yellow Mustard
- Sweet Pickle Juice
- Granulated sugar
- Green onions
How do you make classic mustard potato salad?
- Boil: In a 4 quart pot, boil diced potatoes until just soft, but not mushy (around 7-10minutes), drain and set aside.
- Peel and dice hard boiled eggs
- Mix: In a large bowl, mix together onions, mustard, relish, salt and pepper, mayo, pickle juice, and sugar.
- Combine: Once potatoes are done cooking, mix them and eggs into sauce mixture
- Refrigerate until completely chilled through
- Garnish with green onions
Cooking Variations
You could add other things to it too to punch it up. Like celery, or olives, or bacon…mmmm bacon!
But it is REALLY good as is. And a great side dish for a BBQ.
Can I make ahead? Yes!
Totally make this ahead of time! It is quick and easy and even better sitting in the refrigerator blending together.
Mix it all together and place it in an airtight container. It will last in the refrigerator for last 3-4 days.

This is a great side dish with so many main dishes to go along with it.

Can I freeze it? Yes!
It is not recommended but if needed this does freeze well. But it may not retain its consistency once thawed.
While freezing the potato salad is easy, thawing it needs special care, as it can easily get soggy and mushy.

Classic Mustard Potato Salad
Ingredients

Oh no! It’s so hard when you have a scheduling conflict. I’m missing a friend’s wedding at the end of May for the same reason! I love the chunks of potatoes in this salad. This needs to be on my next BBQ menu!

I have made this recipe so many times that I just had to finally leave a rating and comment. It’s become one of my niece’s favorite foods and she doesn’t even want to share it with anyone else, just wants all the leftover potato salad for herself! Finally a potato salad recipe with pickle juice!
My mom always used pickle juice and of course so do I. Being a curious
cook I like to check out others’ recipes, but they nearly always use vinegar which just doesn’t taste right, as far as I’m concerned. The last time I saw pickle juice in a recipe was 25 years ago and it used three kinds, dill, sweet and candied. That’s the one I use today. Congratulations on making your potato salad the ‘right’ way.
