I am a HUGE holiday enthusiast. Like the biggest ever! I pretty much celebrate everything. So when St. Patrick’s Day comes, I can’t help myself. I have to do the whole corned beef and cabbage thing, soda bread, and lots of green and rainbows.

Here are all of my St. Patrick’s Day favorites in one place, from corned beef and shepherd’s pie to soda bread, colcannon and fun rainbow treats. I highly recommend the rainbow cake. My kids really loved it, and it is far easier to make than it looks.
