Sweet cherries on top of a creamy cheesecake with an oreo cookie crust. This No Bake Cherry Cheesecake is so unbelievably easy to make, and only takes 30 minutes!

Let me tell you a few things about this particular cheesecake.
First, it’s really, really good. I mean eat-the-entire-thing-with-a-fork (not that I do that…) kind of good.
Second, your guests will probably assume that you spent hours baking it. It’s ok, we’ll keep this recipe our little secret. If you’re really intent on baking, you may like my Easy White Chocolate Strawberry Cheesecake.
Third, my fiancé dropped mine on the floor after the photoshoot, and it was very distressing.
I mean, I’m finishing off a piece of cheesecake while I type this (which I promise I took beforehand, it’s not floor-cake), but I like knowing that there’s still something waiting for me later.
A sweet No Bake Cherry Cheesecake with my name on it, in the very near future. A delicious payoff for all of the 30 minutes I spent in the kitchen making it.
Or, you know, dinner tomorrow. Whatever.
Alas…
But you know what? It’s totally ok! Because this recipe happens to be so ridiculously easy and quick that I’m going to make another one after work tomorrow.
Did I mention this dessert is also gluten free? You can use regular Oreos for this recipe, but I used gluten free “Oreos” (glutino brand) as a replacement for this one. You can also use any berry for the topping, like blueberry, strawberry, or raspberry. Simply sub in the same amount of fruit for the cherries.

Because No Bake Cherry Cheesecake only takes about 30 minutes to make, including whipping my own cream, I have no problem tackling this dessert on a work night!

No Bake Cherry Cheesecake
Ingredients
For the Crust
- 3 tbsp unsalted butter melted
- 1 cup crushed Oreo cookies Glutino if gluten free
For the Filling
- 2 8oz packages cream cheese
- 1 1/2 cups heavy whipping cream cold
- 3/4 tsp cream of tar tar
- 1/2 cup white sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
For the Topping
- 3 cups pitted cherries
- 1/2 cup water
- 1/2 cup sugar
- 2 tbsp corn starch
- 2 tbsp lemon juice
- 1 tbsp vanilla extract
Instructions
For the Crust
- Grease a 9-inch springform pan and set aside.
- In a bowl mix together crushed Oreos and melted butter.
- Press evenly into bottom of springform pan.
For the Filling
- In a stand mixer beat together cream cheese, sugar, lemon juice, and vanilla extract until smooth. Place into a second bowl and set aside.
- With a clean bowl in a stand mixer, add whipping cream and cream of tar tar. Whip on med-low until it forms stiff peaks (about 3-5 minutes).
- Add cream cheese to whipped cream until just mixed together.
- Pour into springform pan and spread evenly.
For the Topping
- Add cherries, sugar, vanilla extract, and lemon juice to a saucepan over medium heat.
- Whisk together water and corn starch, and pour into saucepan.
- Stirring frequently, bring to a boil. Once boiling, turn heat down until sauce begins to thicken.
- Remove from heat and allow to cool.
- Once cooled, pour over cheesecake.
- Cover cheesecake and refrigerate for 2-3 hours before serving.
Notes
If you don't have a stand mixer, an electric hand mixer should work.
