Lasagna Roll-Ups
Layers of spinach cheese mixture with just the right amount of marinara sauce all rolled in a soft lasagna noodle! Put a twist on your classic family dinner meal!

Make Ahead Lasagna Roll-Ups
Make ahead lasagna roll ups, individually portioned pieces of lasagna, perfect for busy nights or to take as a lunch. It is basically individualized slices of lasagna. I also love that I can add whatever I want.
This is my daughter’s favorite. She asks for it all of the time. I love making these for the freezer because I can serve them when it is just me (for lunch on a school day), or for a family dinner.
They are fast and easy to reheat, and taste great.
How to make Lasagna Roll-Ups:
- Mix together cheese mixture of ricotta, cottage cheese, parmesan cheese, garlic salt, oregano, parsley, and onion powder. Taste, and adjust seasoning to preference
- Cook ground beef and sausage over medium heat, cook until browned, then drain, and set aside.
- Bring a large pot of salted water to a boil, and cook lasagna noodles according to the package directions.
- Once cooked al dente, lay them out individually on a wax paper lined tray so they do not stick together
- Then carefully layer with a sauce, cheese mixture, and ground meat mixture, using only about 1-2 Tbs of each so as not to over fill the noodles.
- Roll up being careful to not have the filling items spill out the sides.
- Leave on the lined baking sheet, and freeze for an hour or two until they hold their shape.
- When frozen, bag in a gallon sized freezer bag
- Pull out one at a time, reheat in oven, microwave, or by steaming, serve with marinara sauce on top and mozzarella cheese if desired.
- If baking, put in baking dish, cover in sauce, and bake at 350 for 25 minutes, top with mozzarella cheese and bake an additional 5-10 minutes until cheese is melted.
Do Lasagna Roll-Ups Freeze Well?
I love making these for the freezer because I can serve them when it is just me (for lunch on a school day) or for a family dinner.
They are fast and easy to reheat, and taste great. I freeze them as just the roll up, and when I prepare them I top them with sauce and cheese when I reheat. Yummy!
What sides go well with Lasagna Roll-Ups?
Anything you would serve with traditional lasagna will go well with Lasagna roll ups.
I like to serve them with salad, green beans, or some other green vegetable–like roasted broccoli.
What kind of sauce is best for Lasagna Roll-ups?
This recipe is a basic marinara lasagna, but you can do white sauce and chicken, veggies, or whatever you have on hand.
The beauty of this dish is you can customize it. During the summer when I have an abundance of zucchini I like to add some sauteed zucchini to the roll up. Or shredded carrot.
How do you store Lasagna Roll-Ups?
You have a few options.
If you plan to use them right away, simply store them in the refrigerator in an air-tight container until ready to heat and serve. They are great in an air tight container or baking dish in the refrigerator for 3 to 4 days.
The other option is to freeze your lasagna roll ups.
How do you freeze Lasagna Roll-Ups?
These are so nice to freeze individually or all together in the pan.
If you want to freeze the roll ups for later use, wait for the lasagna to cool, then either put them in a foil pan, and cover with plastic wrap and a lid.
Or place them on a cookie sheet, and freeze them for 2 hours until nearly frozen solid, then carefully place each roll into a zip top freezer bag.
Freezing them some first will prevent them from sticking together, and will allow you to use them one at a time later.

Ingredients

I made these as a freezer meal for my family as well as for my brother and sister in law when they had their first baby. They were so messy to make. Simply making a lasagna would have made more sense. In addition there was way too much salt. My brother agreed. I’m going to add extra sauce when I bake the next batch, hopefully that will dilute it enough.
I will imitate this recipe, but tweek it to my families own taste.
