What you need to make breakfast burritos
Simple ingredients that are around your house each day. Blend them all together in one tortilla and the flavors are amazing!
I love how quickly these burritos come together and my kids can gran and go with them each day.
They are a huge staple in our home. If we start running out I quickly make more to have on hand.
- Dozen eggs: Scramble and cook them in a skillet. I usually add a little salt and pepper to enhance the flavor.
- Cheese: mixed cheese, colby jack cheese or sharp cheddar cheese.
- Bacon or sausage: Either meat is great depending on what you prefer.
- Hash browns: I love the added soft, potato.
- Tortillas: large floured tortilla is best to wrap in the most ingredients.
- Spinach: a little bit of green to top off the burrito.
Breakfast burrito recipe
These make ahead/freezer friendly breakfast burritos are a real treat in the mornings for my kids. They know exactly what is in them and which one they are wanting in the morning.
The ingredients are slightly healthy and affordable when planning for my kids breakfast. It is a great way to help them out physically and mentally before school.
The preparation and the ability to make them ahead of time, gets you on your way quickly so you can get more things done in the morning before rushing off to school.
My kids know the drill when it comes time to make these burritos. We set up one assembly line style. First they have the foil with a tortilla on top. Next, they add in the fillings. Then we wrap them up with the tortillas then foil.
I like to label my freezer bags with a permeant marker and they are ready to grab, bake and go in the mornings or even after school for a snack.
I preheat the oven when I wake up and each kid knows just what to do. They grab their breakfast burrito and sticks it in the oven.
If we have extra time we will sit and eat together and add in sour cream, salsa, avocado and fresh cilantro.
But most the time we are driving to school with a breakfast burrito in hand!
Luckily the flavors are the perfect blend and makes our morning commute even better in the car.
How to make a breakfast burrito
- Cook all ingredients. Scramble eggs use a bit of salt and pepper to season, and some cheese, and stir in chopped spinach when almost cooked through.
- Cook sausage or bacon and crumble.
- Cook hash browns until browned and slightly crispy
- Assemble burritos by laying tortilla flat, adding a scoop of eggs, a scoop of hashbrowns, and a scoop of meat, sprinkle with cheese, and roll.
- Freeze.
- Preheat oven to 325
- Bake 20-25 mins from frozen
Can you freeze breakfast burritos? Yes!
I put them together on a piece of foil, that way I could wrap them in it, and put them in a freezer bag, to pull out as I want them, one at a time or several.
Super simple! Super easy! Super efficient!
You can easily freeze these breakfast burritos by assembling ahead of time.
The mess and prep work is already done and taken care of. All you have to do is bake!
This gives us more time to get ready, style hair, pack lunches and finish anything else before we need to walk out the door.
It is a win-win because everything is done in the morning and everyone gets a hot, delicious breakfast!
Freeze: Simply wrap each breakfast burrito tightly in foil. Label the freezer bag and place burritos inside. These will store in the freezer for about 2 to 3 months.
Reheat: These can be reheated in the microwave or oven. I prefer the oven but the microwave is faster if you are in a time crunch!
- Oven: Preheat your oven for 400 degrees Fahrenheit. Place breakfast burrito with foil on it on a baking sheet and bake for 30 to 40 minutes or until warm. Flip the breakfast burrito halfway through.
- Microwave: remove foil from the wrapped burrito. Place breakfast burrito on a plate and microwave for about 3 to 5 mines or until warm. Flip the breakfast burrito halfway through.

Keeping things practical and readily easy we love to stick to the basics of ingredients. We do love to waver though and create some fun tasting breakfast burritos for our morning wake up call.
You can customize your burrito with as many or as little of ingredients that you like. Assembling these are the easy and turn out to be so flavorful and filling in the morning.
Here are some variations to choose from:

Tips for making breakfast burritos:
- Eggs can be rubbery when reheating. Try to remember to undercook them slightly when make them.
- Let you burritos cook first before making them into freezer burritos.
- Place your burritos in the pan with the seam down so they do not unravel.
How to fold a burrito
It is important to get all of your favorite ingredients tightly folded into your tortilla. Try not to over fill your tortilla.
If you have too many ingredients and it is overflowing, the tortilla will not be able to wrap around the fillings in a nice and neat manner.
Layer your fillings down the middle of the tortilla. Leave about 1/2 inch of space on both ends of the tortilla. This will help when folding and wrapping your tortilla.
Fold one half of the burrito over the filling and then tuck in both sides tightly as you roll.
