You could make it ahead of time and then reheat it in the oven or microwave. It is definitely a dip that I will reheat in the microwave when I have leftovers for a quick snack or lunch.
However, when preparing for a party or small gathering I just make it, bake it, and take it. That offers the best, freshest results.
Or prep everything, and wait to bake until you are ready to serve.
- Shred chicken and mix with hot sauce.
- Mix together the cream cheese filling.
- Layer in a casserole.
- Cover and refrigerate until ready to bake.
The dip will last in the fridge for 2-3 days.
Can You Freeze Chicken Dip?
Sorry with a gritting teeth emoji face. I wish the answer was yes. Anyone who knows me knows I love freezer meals. I love anything I can prep ahead and freeze, like these teriyaki bowls, and breakfast burritos.
However, as a general rule of thumb, I typically do not advise freezing recipes with cream cheese. A lot of times once defrosted the texture will become compromised.
For this recipe in particular, the creamy texture that is essential to the dip is lost if reheated after sitting in the freezer frozen.
Good news though, it is a super easy dip to make, and only takes a few minutes. Just make it when you want it. Don’t make worry about needing to make it ahead of time and freezing it.
Tips and Tricks to make Buffalo Chicken Dip:
Tip 1: Use Ranch or Blue Cheese.
Like ranch dressing more? Only use ranch. Obsessed with blue cheese? Then pretend I never mentioned ranch.
Either works great for this recipe. Use what you like based on personal preference.
Tip 2: Grate Your Cheese Yourself.
I know that buying pre shredded cheese is a time saver and you can do that. However, using freshly grated cheese is way better. It just tastes better and offers a better texture, than prepackaged shredded cheese. Many pre-packaged shredded cheese options are coated in a corn starch type substance to keep the shreds from sticking together. It will melt better and be better in the dip if you shred the cheese yourself.
Tip 3: Use The Chicken You Have On Hand.
This recipe calls for rotisserie chicken, but don’t make an extra trip to the store for it. Poached shredded chicken, or canned chicken work great too. It is very versatile.
Tip 4: Use The Hot Sauce That Makes You Happy
I’m a big fan of Frank’s Hot Sauce, but other pepper sauces will work great with this recipe too. Use the one YOU love.

Buffalo Chicken Dip
Ingredients
- 1 pound shredded Rotisserie Chicken
- 16 ounces Cream cheese softened
- 1/2 cup Ranch dressing
- 1/2 cup Blue Cheese dressing
- 3/4 cup pepper sauce such as Frank's Red Hot(R)
- ¼ cup melted butter
- 1 1/2 cups Cheddar cheese shredded
- 1 lb celery a single bunch, cleaned and cut into 4 inch pieces
- Crackers for dipping
Instructions
- In a skillet over medium heat, mix together hot sauce and butter.
- Add chicken, and toss to coat. Set aside.
- In a separate bowl stir together the cream cheese, ranch dressing, and blue cheese dressing and half the shredded cheddar cheese.
- Spread cream cheese mixture across the bottom of a sprayed baking dish, top with chicken, and sprinkle top with shredded cheese.
- Bake for 20 minutes in 350 degree oven, until cheese is melty and everything is heated through and bubbly.
- Serve with celery sticks and crackers.
